Vegan Banana Pudding! ( http://www.food.com/recipe/super-simple-vegan-banana-pudding-399370) -Plus, if you can get your hands on some vegan vanilla-flavored cookies: crush em up a bit, not too small, and mix 'em in to serve. I also tend to throw in some cinnamon for good measure because I'm obsessed with cinnamon. Vegan Banana-Nut Pancakes! ( http://www.vegblogger.com/blog/2009/11/vegan-banana-nut-pancakes.html- This is a great recipe. I tend to keep a mixing bowl of the batter in the fridge to whip up breakfast for a couple of days. Alternatively, I make the entire batch and freeze the leftover, cooled pancakes. They reheat well on the griddle.

Make a shiitake ton of banana muffins and freeze them, so when you get the munchies whilst studying for finals you can pop one out, defrost it, and instant banana muffin!

yes. shittonne of muffins and banana bread and freeze 'em. you can peel some of the bananas and put them in tupperware and freeze later and make smoothies with them

I posted this on FB but in case someone's looking for banana ideas again someday:
shove a popsicle stick in one end. coat your banana in chocolate sauce. if you like, roll it in a topping (rainbow sprinkles, nuts, cookie crumbles...). stick it in the freezer. voila! bananacle!

when they start to really ripen and turn brown you can chop them into chunks and freeze and the next day make banana soft serve ice cream by blending the chunks with a milk sub and some peanut butter. and yeah banana muffins too!

Peel, slice, bag, and freeze 3/4 of them.
I'd bake banana bread with the rest and freeze the loves. But I have a bit of a banana bread problem.

Yeah, freeze at least half for future banana bread/cookies/muffins. Make banana everything cookie dough from VCIYCJ and freeze the dough. Oh and banana pancakes! yum!

here is my very good banana bread recipe. do it! if you have three loaf pans do a 1 1/2 recipe batch and give some away. then freeze the rest of the bananas so you can make more later. you can also use it for muffins but you'll need to take them out of the oven much much sooner obvs, but i'm not sure how quickly they cook as i haven't done that in a while...
Banana Bread *2 cups flour (i usually make this mostly all purpose flour but with some whole wheat pastry flour.. maybe 1/2 cup ww pastry, 1 1/2 cups all purpose but this isn't necessary at all..) *2 teaspoons baking soda *2 teaspoons baking powder *1 teaspoon salt *4 very ripe bananas *1 cup sugar *1 teaspoon vanilla *1/2 cup vegetable oil (i sometimes put a couple big spoonfuls of applesauce in my half cup measure and then fill it the rest of the way with oil to cut down a bit on how much goes in there... you prob. want it to be more than half oil though) *2 teaspoons cinnamon (i probably put more than this in of the cinnamon and the ginger... maybe generous "heaping teaspoons") *2 teaspoons ground ginger *big pinch of ground nutmeg... 1/4 teaspoon? (this probably isn't necessary) *small pinch of allspice (this probably isn't necessary)

heat oven to 350. in a medium bowl mix flour, baking soda, baking powder and salt. In a large bowl mash up the bananas, then mix in the sugar. stir in vanilla, oil, cinnamon, ginger & spices. Stir in the flour mixture, about a third at a time. Divide batter into two 9x5 loaf pans. (if you have blueberries or nuts or something else you want to add in, do it here probably. i often add in 1/2 cup or so of frozen blueberries to each pan. if i want it to look fancier/cakier i'll sprinkle some turbinado or some such sugar on top. Bake for about 1 hour. (often done much sooner...)*
*the cooking time is really erratic for me, probably a combination of my changing the ingredients and amounts i put in and that bananas are all different sizes and that my oven is one of those old jobs that is really cute but has a hard time keeping a consistent temperature (though maybe i fixed this recently?)... BUT the point is i normally start checking it at about 40 minutes.

Sounds yummy! I wish I had way too many bananas in my house... -Smoothies! I love to have a frozen banana stash for smoothies -Banana fritters, or a bananas foster -Banana bread, banana pancakes (breakfast for dinner? Always.), and of course muffins -Rachel Ray was adding a small banana to her sweet potatoes, which sounds interesting... if you're not already sick of sweet potatoes.

How I got them: the bf felt it necessary to buy out the grocery store's entire markdown produce shelf. It was about $6. So far I've done a double batch of Vcon banana bread (one loaf and a dozen muffins) and we've eaten about 5 between us. My apartment smells like bananas.

i skimmed through this, lots of good suggestions, but i don't think anyone said you can freeze them in their skins- no bag, or anything. when you want to use it, let it sit out a half hour or so, and squirt it out- not pretty but easy-peasy and good for baking, throwing into a shake.

This is what I'd do. Sometimes I also blend frozen bananas with silken tofu (sometimes with cocoa, sometimes just cinnamon and maybe nutmeg) for an ice cream sort of thing.
