I started this thread on the old site and I can't find it here, so I'll recap briefly before I share my favorite discovery of the day.
I'd been looking to clone Braggs Apple Cider Vinegar "Ginger Spice" drink, which is just water, ACV, ginger, and stevia. After much experimentation, I came up with a recipe that was close enough for me:
2 cups water 1 Tablespoon ACV (I use Braggs) 1/4 teaspoon stevia extract (I use PureVia) 1/8 teaspoon ground ginger
For a 5-cup steel bottle, I use about 3 Tablespoons of ACV, 3/4 teaspoon stevia extract, and 3/8 teaspoons ginger.
I recently picked up some coconut vinegar at People's Co-op in Portland, and it's got an amazing flavor. Here's what I did with it tonight, and this is the best experiment so far:
3 Tablespoons coconut vinegar 3/4 teaspoon stevia extract 3/8 teaspoon ground ginger 1/8 teaspoon ground cinnamon all in a 5-cup steel bottle then filled to the top with water
The hint of cinnamon really perked up this drink. It's now sort of like drinking a spiced vanilla cookie with a slightly tangy spark. Only this one has almost no calories (I think) and it helps you get your nine hundred glasses of water a day or howevermany we're supposed to have.
[EDIT: Not TruVia; PureVia.]

Thanks! My husband drinks ginger for his tummy...this will be tastier and much more economical than buying the Ginger Soothers drinks!

This sounds really good, my friend is always telling me I need more ginger. I agree, and this seems like a good way to get it.

It's pretty much Switchel, an ages-old drink also called "Haymaker's Punch" and a bunch of other things. From my recent reading, it was used as Gatorade in the days before Gatorade. From the link above, here's one recipe: - 3/4 cup maple syrup
- 2/3 cup apple cider vinegar
- 1 heaping teaspoon ground ginger
- 1 gallon Water

I hadn't looked up the calorie information for ACV before, not wanting to find out my new fave drink was too carbtastic to be sustainable. Turns out there are about 3 calories per tablespoon, so, yes, this is a practically calorie-free thirst quencher. (Of course, that doesn't apply to the Switchel recipe above, or any of the other ones online that call for bunches of sugar or syrup.)

Justanotherdave, you just mix this up and chill it? Or is there some cooking or fermenting step that I'm overlooking? We have a seltzer bottle thingy that I'm thinking needs to be employed in this project.

No cooking, no chilling, just pour in the four or five ingredients (I tend to mix the powders with the vinegar first, then add the water), and you're set. sugarbeet wrote: We have a seltzer bottle thingy that I'm thinking needs to be employed in this project. Most definitely. :-) It'd be like an instant, tart ginger ale.

torque wrote: any suggestions about how much fresh ginger one should use? That's my question, too, and why I said the original recipe had room for improvement. Food.com says 1/8 teaspoon of powder is equal to about 1 Tablespoon of fresh, grated ginger, but it notes that "the flavor of ground ginger can be significantly different from fresh." A Tablespoon sounds like a lot, to me, and I don't know how grated ginger would infuse with the water and vinegar. Maybe mince it to expose more surface area to the drink? Or maybe that's a case where it would be useful to boil the ginger first to get the flavor into the water, then mix it with the ACV and sweetener? That's what they do for ginger ale, anyway. I've been happy enough with the powder, but I'd love to hear from a ginger pro on this one.

I would probably just sit it in boiling water, like you're making tea, then let it cool and strain it. But a tablespoon definitely sounds like a lot.

all right, i did some experimenting today. it wasn't quite what i had expected, but to be honest, i didn't write down the recipe and i totally eyeballed everything. but i did use fresh ginger, so here's what happened..... i took about 4c water and grated a 1-inch knob (hehe) of fresh ginger with my smaller grater (could have used a zester too). mixed with the water and strained, then squeezed the dregs. added the liquid stevia and a drop of vanilla and about 1T vinegar and a bit of lime juice. it wasn't brilliant, but it was a zingy ginger drink. i could have added more ginger, and think i will next time. there's still room for improvement, but it's a good start.

Possibly very important edit to the original recipe: I thought I was using TruVia; turns out I was using PureVia. I wouldn't have thought it would make a difference, but I looked at the packages side-by-side at the store, and one 40-packet box of TruVia is about 4X as big as one 40-packet box of PureVia. One packet of PureVia is 1/4 teaspoon, so that's where I got the 1/4 teaspoon measurement. I have no idea how much variation there is between Stevia extracts, so your mileage may vary.
