Hi,

I've been trying to make a recipe with pigeon peas. I've cooked the bans a LONG time, without the beans getting "soft".

Is the texture of the cooked pigeon pea, similar to a potato, the way cooked pinto beans is or is the texture of a cooked pigeon peak stringy/beany/firm like edamame, yellow soybeans, or chick peas?

It's a smooth texture, like a pinto bean or firmish potato. Chickpea interiors seem a bit grainier to me than pigeons. I've made a rice casserole and stew with pigeon peas so a bit of experience with them here, not tons.

Interesting. I was at a friends house, without my pressure cooker. We boiled the suckers for about 3 hours and they never got a texture like a pinto bean.

I should note that I've only cooked pigeon peas in a pressure cooker--unless I'm slow simmering the beans specifically for a recipe, I always pressure cook them before using.

Were they old? It seems like the kind of thing someone might buy and leave hanging around for a while. By which I mean, that is exactly the legume I bought and left hanging around for a while.

LOL. There were Goya brand, picked up from the supermarket.

I have no idea how long the supermarket had them. I bought some more to try again, this time with a pressure cooker. I also bought a can of them so I can see what the texture of the cooked pigeon pea is supposed to look like.

Second attempt cooking pigeon peas.

Same brand, bought from the same store as the first attempt.

This time I used my pressure cooker. It took half an hour, but they came out "potato soft", very similar to black eyed peas.
