When it expires at work, usually I freeze it, but the freezer is full...so what can I make with gallons of so delicious french vanilla creamer?

I don't really want to do ice cream because I take my sweets to work for everyone to eat. Also, no more room in my freezer right now.

Oops, misunderstood that--I used to put leftover creamer in the breakroom freezer, that's what I thought you meant.

oh yeah, I meant my home freezer! And I guess it's confusing that I mean I take my sweets to my OTHER job..not my culinary job, since they already eat my food all day. haha

Make chocolate pudding with it, then layer with brownies and whipped coconut cream to make a trifle-type thing! Or go Midwestern potluck and make sex in a pan with chocolate or lemon pudding (recipe in link is not vegan, but you get the idea).

rice pudding
agar jello, serve it cut into cubes in watery anko (you can use canned anko, this is a variation on shiruko, which usually has mochi in it)
use it as the liquid in the Vcon lemon coconut bundt cake

You could use it in some sort of batter, I've made mug cakes and pancakes with soy creamer or coconut cream (soy milk comes in bottles that are too big me for me) and that worked fine, if the creamer is too thick you can add some water.
