Curry! Apples and AJ are frequent in Japanese-style curries. And it's yummy.

Since my husband is a cider maker, we frequently have a tonne of cider at various stages of testing to use up. I've been using it to deglaze instead of wine for a fruitier dish. It's the alcoholic cider so it's not the same as juice, but I really like the subtle apple flavour for stuff like curries.

I hate drinking apple juice so I have had to be creative with it in the past. Curried apple squash soup is nice too. I make a BBQ sauce with cider too, and it would be just as good with juice. I've also used it as the liquid in a bunch of baked goods, and even waffles.

I need these curry recipes! My mom also gifted me 3 bags of apples, I always end up making apple sauce to freeze for baking or pies/crips but I don't have a giant deep freezer any more so I need to find other ways to use up the apples!

I bought a bottle of tomato juice for a gazpacho recipe, but it only called for 1/2 a cup, so I have most of the bottle just sitting there. I'm not fond of savory drinks, so I'm not interested in drinking it straight or making bloody marys. Are there any recipes that include it, other than gazpacho??

I add tomatoe juice to homemade broth or any soups/tomatoe dishes. Alternatively you can freeze it into cubes and use it as a pseudo broth/flavour enhancer.

Freeze it in icecube trays and use it later.

You could use the tomato juice as the cooking liquid for any grain. You could get fancier and saute some aromatics and diced veggies and then toast your grain in the pot and then add the tomato juice to make a pilaf.

You could also use it as some or all of the liquid in a savory scone, muffin, or bread.

Hmm, I wonder if you could use it to make salad dressing.

All of this sounds delicious! Thanks for your guidance and suggestions, everyone.

My CSA has informed us there are mustard greens coming in this week's box, and that they'll be SUPER spicy. Suggestions for how to use them? (I love spice, not particuolarly trying to hide it, although perhaps keep it palatable for people other than me who don't like to breathe fire)

This! It was really good. I made it with kidney beans instead of tofu for my spicy mustard greens. I actually have half the batch in my freezer and I plan on us having it one night this week.

mmmm that looks really good. I've got everything except the tofu, so I'm thinking I'll also replace with beans. Pinto maybe...

I just had the leftovers tonight and it is SO GOOD. I forgot how much I enjoyed it, honestly. Mr Moon isn't a huge curry water and ate huge helpings. And it is really great with beans. Do it!!

For apples, there's a recipe in AFR that I've been eyeing. I wish I remembered the name. (Helpful, I know, but if you have the book it's probably searchable in the index?)

Is it the ginger spiced sweet potatoes and apples? I've been eyeing that recipe for a good winter dish but I haven't made it yet. Anyone have any experience or reviews?

Any idea what to do with a load of bok choi other than stir-fry?

You can make kimchi with bok choi, even though napa is the more traditional cabbage.

Thank you both, I made a batch of miso noodle soup with it, and now have ideas for next time.

Yum! I made miso noodle soup yesterday too! Mine had kale (and seaweed) in it.
