When aquafaba was really starting to take off, I made a huge batch of haricot (aka navy) beans to experiment with the bean water. I froze most of the beans, and I've since used most of what I froze. I have one bag left, approx 2 1/2-3 cups, and Mike has decided he doesn't like the pie that I usually make with them. Any ideas what I can do with them (other than baked beans since I'm partial to Heinz)?

White bean and leek cassoulet? It's in Veganomnomnomicon and is delicious!

I totally forgot about that! Good suggestion - I love the cassoulet but haven't made it in ages.

I have about 4 cups of ancho lentils leftover from the IDI recipe. How can I repurpose?

I'm thinking possibly some kind of chestnut gravy or sauce but if you guys have any recipes that uses this stuff I am all ears (or eyes, even).

Possibly a bit late, but I have quite a few recipes using chestnut purée - a tin of the stuff is one of the major ingredients in our Christmas pie (which also has walnuts, mushrooms, onions, tomatoes etc. and is then wrapped in flaky pastry), chestnut-brandy-chocolate truffles are easy and good, and I've also used it to not-bad effect instead of pumpkin purée for a pie!

The chestnut truffles recipe (of sorts - it was during a time when I needed to buy scales, but you can get the gist I think) is here if you're interested.

I don't know what you originally used them for but what about a spicy/smoky lentil soup?

The truffles are on my blog here - https://dropscone.wordpress.com/2013/09 ... -truffles/ - I mentioned above that it was from a time when my scales weren't working very well, but it's not a complicated recipe, more a sort of template.

How about using them instead of chick peas to make V'con ancho lentil cutlets? Maybe adjust the seasoning in the recipe to go better with the ancho lentils.

Yellow jackfruit? Internets tells me that the yellow stuff is sweet and not suitable for tacos and the like. But I have a package in the freezer languishing.

That seems an obvious answer I didn't even remotely consider, oddly.

Maybe I'll try in a smoothie.

Maybe sweet and sour jackfruit instead of tofu etc?

I got a package of smoked tempeh for free, and I had used it once before in the grilled tempeh recipe from Vcon but that recipe wasn't the best choice for this tempeh (I love the recipe and it works great with regular tempeh, but it didn't do much to enhance the smoked tempeh).
Any idea what I could do with it? I love tempeh and I'd like to use it in a way that makes use of the fact that it's smoked instead of regular.
Thanks!

How about tempeh, avocado, and tomato sandwiches? My favorite use of tempeh is bacon for sandwiches.

I second tempeh sandwiches. I have been having tempeh, houmous and tomato bagels for lunch this week and I never get sick of them. I cut tempeh up into strips and bake it with soya sauce, liquid smoke and balsamic vinegar, but you could use whatever seasoning you like. If your tempeh is already smoky then you probably wouldn't need to do much to it. Also tempeh freezes really well. I tend to pick up a couple of packets at a time from the Asian market, then cut it into strips and put in the freezer, ready for sandwiches and stir-fries. #ihearttempeh

I would use that smoked tempeh as the bacon in a BLT.

I would use the smoked tempeh with a tofu scramble, either on the side or mixed in.

Great ideas, thanks! I think I'll give the sandwich a try.

Mustard greens! I've got a ton in the garden and outside of lots of recipes for sautéed greens (and one tofu and mustard greens curry by Bryant Terry, which I will try) I cant find much that calls for them specifically.

The variety I have appears to be a particularly bitter one from what I've read, so I don't want to just swap them in for kale/whatever in other recipes.

Any recommendations?

When I have really bitter greens I like to make a indian style curry with sweet potatoes to balance them out. Super yummy.

Hominy! What can I make with this?

I bought a huge tin of the stuff as I found it in the TK MAXX food section and have never seen hominy over here before. I've never eaten it either so if anyone has any recipes to make the most of this, that'd be super helpful.

So I bought a bag of soya beans before. Dry soya beans. No idea why I bought them but I did and they are hanging around a lot time .

I also have a lot of split yellow peas. Not a fan of the AFR soup using them but will give most things ago.
