Rosie - do you have (access to) Viva Vegan!? There's a recipe for posole that calls for a can of hominy (I can't remember what size but I always use a full huge can). Though you might run into issues finding other ingredients where you are.

DC - I actually prefer the split pea soup in Quick and Easy Low Fat Vegan Comfort Food (Alicia Simpson) to the one in AFR. Or you could make dhal with them.

Rosie, yes, you need to make posole! There is also a good recipe in Vegan Eats World I think.

DC, my very favorite thing to do with yellow split peas is an Ethiopian recipe with green chillies: Ye'kik Allecha. I use the recipe in Kittee Berns Papa Tofu Loves Ethiopian Food, but I"m sure there is also a good recipe in her Tef Love, and you can probably google it for a good recipe too.

I am too late but my favorite non-posole/menudo thing to do with hominy is to sauté onions in a pan, add diced zucchini and salt, cook until the zucchini starts to get a bit tender, then add the hominy, heat and eat. You can also add some tomatoes as well when you add the zucchini.

Darn it. In my haste at the grocery store I bought canned lupini beans at the grocery store, and not large Lima beans. Grumble.

Looking online mostly just tells me to marinate them or eat them with olives? Which I guess is fine but, meh. Any recommendations?

I have a tonne of peaches and I'm tired of eating them out of hand but my husband doesn't really like cooked fruit. I thought about peach salsa but honestly I don't love the sound of it. Help!

Oooh maybe I will make jam. I like it when I get into it, and then I can give it to normal people who appreciate peaches who are not my husband!

I have half a thing of sour supreme too. My p/t roommate puts it on everything, but I don't really like it unless it's heavily disguised in a recipe. I don't think I've ever gone through a tub of it before it goes bad, and yet I always "need" it for something enough to buy it!

Sometimes I make chili mac and mix a few spoonfuls of sour supreme in. It always goes bad in my fridge, too. Maybe some kind of baked good? Or pancakes?

Whenever I have too much fruit, I either freeze it for smoothies, or make it into sorbet, pie, or daiquiris. Lately I've been really into adding fruit to kale salad. The sweetness of the fruit is a lovely contrast to the bitterness of the greens. White peach sangria would also be good.

If you like salsa, you still might like peach salsa. I don't think it sounds all that good either, but it's surprisingly delicious.

Apple juice. Hmmm. Not an item I ever have in my home. I think I'd use it up in smoothies or use it as the liquid to make oat meal. Or how about using it as the liquid in muffins or scones or even cake? Maybe you could use it as the cooking liquid for a pilaf if you also added enough bitter, spicy, and/or sour ingredients to offset the sweetness: chiffonade of dark green leafy vegetables, minced jalapeno, vinegar, etc.

Yah, I almost never buy commercial apple juice (its too sweet!) so far I have used it to brew up some teas in. Just boil apple juice and add loose leaf tea and enjoy.
I also tried just heating it with autumn spices and drinking it like a mock apple cider which was pretty good.

Curry! Apples and AJ are frequent in Japanese-style curries. And it's yummy.

Since my husband is a cider maker, we frequently have a tonne of cider at various stages of testing to use up. I've been using it to deglaze instead of wine for a fruitier dish. It's the alcoholic cider so it's not the same as juice, but I really like the subtle apple flavour for stuff like curries.

I hate drinking apple juice so I have had to be creative with it in the past. Curried apple squash soup is nice too. I make a BBQ sauce with cider too, and it would be just as good with juice. I've also used it as the liquid in a bunch of baked goods, and even waffles.

Use the apple juice for Pumpkin apple soup! I substitute most of the water with apple juice, with fresh ginger and nutmeg at the end it's delish.

I bought a bottle of tomato juice for a gazpacho recipe, but it only called for 1/2 a cup, so I have most of the bottle just sitting there. I'm not fond of savory drinks, so I'm not interested in drinking it straight or making bloody marys. Are there any recipes that include it, other than gazpacho??
