The Toronto Star newspaper has started its annual Advent Cookie Calendar where they post a new cookie recipe every day until Christmas. What I like most about their cookie recipes is that they are unique combos and flavours. With tweaking, those recipes that aren't vegan can be made vegan.

Today's recipe - S’Mores Cookies. (I'm using the Vegan Fluffy Buttercream Frosting in VCTOTW instead of marshmallows; 1 heaping tbsp of soy flour plus 1 tbsp water for the egg and EB for the butter)

I've got to put in a promo for the Pikkuleivat (Finnish Cardamom Sugar Cookies). We made them for brunch today and they are fabulous with coffee. Used eb for butter and the usual 1 heaping tbsp soy flour and 1 tbsp water for the egg.

This is wonderful, thanks for posting. I have a feeling I'm going to be baking and giving a ton of cookies away this holiday season.

The Pikkuleivat are really calling to me now. Must resist urge to go to the store tonight.

The Hungarian Shortbread bars are fabulous ! You freeze the dough and then grate it into the pan before topping it with jam and more grated shortbread dough. I used the soy flour/water egg sub for the 2 egg yolks.

The Psychedelic Christmas Cookies would look fantastic on a cookie tray but I’m still kind of nervous in selecting vegan food colouring – especially the red ones.
