I put mine in the fridge because it keeps it from separating for me. Also, I always keep nuts and seeds in the fridge to keep them from going rancid...It takes me a long time to finish a container of tahini.

I keep mine in the pantry, but only because I never thought to put it in the fridge. Though I can't find it to quote from below, I like the idea about simply turning the tahini upside-down before using it in a recipe to help with stirring after separation.

I keep mine in the fridge. I usually have to stir it when I first open it (same goes with nut butters), but then it usually doesn't separate after refrigeration.
