have one?

i want to make fudge but a lot of the recipes im finding online have reviews that say it doesnt set up. could be user error, but id like to start with a good recipe. ideally something creamy that doesnt require refrigeration (after setting).

I love this recipe (scroll down) from My Sweet Vegan. I don't even know how many times I made it last year. I had people asking me for the recipe. I think I've subbed soy cream for the coconut milk and it turned out fine. You can use cinnamon or mint or other extracts to change up the flavours. It's really good - almost exactly like the fudge my grandmother used to make that took a long-ass time to make. You might want to use chopped chocolate (or even chop your chips) because I found that a lot of my chips didn't melt. But it was still excellent despite the surprise whole chip.

I made the My Sweetl Vegan one for a bakesale and it turned out really well. And was super easy. I can highly recommend it.

I think I need to make Kittee's PB fudge with chocolate swirl and send it to my boy as one of his Christmas presents. By that, I mean he can get fat instead of me.

ETA:
I haven't tried this one, but saw it posted and it sounds pretty good as it involves marshmallow cream.

The fudge recipe from the joy of vegan baking has always worked for me, as well as everyone else I know who has tried it.

That said, some of the best vegan fudge I've had is when I've last-minute veganized and made my own condensed milk, and for recipes calling for, for example, glucose syrup, milk and butter, used golden syrup, coconut milk, and earth balance.

This thread made me make pb fudge, and I don't even like fudge! I mean, it's not something that was a tradition in our house during the holidays but it tastes just fine.

Also, now I'm totally gonna make some pumpkin pie fudge tonight.

A friend of mine sent me this recipe. I don't know where it's from, but I asked for the recipe because it was AMAZING. Two kinds

Easy Vegan Fudge

Ingredients:
6 Tablespoons vegan margarine
3 1/2 cups powdered (confectioners) sugar
1/2 cup cocoa
1 tsp vanilla extract
1/4 cup soy milk
1 cup chopped nuts (optional)

Preparation:
Lightly grease a 5x9 loaf pan using a little of the vegan margarine (I used a canola margarine)

Place the remaining margarine, sugar, cocoa, vanilla, and soy milk in an heatproof mixing bowl or top of double boiler. Place the bowl or boiler over simmering water and stir until smooth. Add the nuts if desired.

Pour the mixture quickly into the prepared pan. Chill thoroughly and cut into squares.

Peanut Butter Maple Fudge

Ingredients:
2 cups natural style peanut butter, unsalted
2 tsp vanilla
2 cups powdered sugar
1 1/3 cup maple syrup
2 tsp arrowroot or tapioca flour
1 tsp salt

Preparation:
In a large mixing bowl, add the peanut butter and vanilla

In a medium saucepan, whisk together the sugar, maple syrup, arrowroot or tapioca flour and salt. Bring the mixture to a simmer for about 1 minute, then remove from heat. Pout the mixture into the bowl containing the peanut butter and vanilla. Stir until well incorporated. Then pour into a wax paper lined 8x8 baking dish. Allow to cool completely.

Life the fudge out of the baking pan by the wax paper and place it on a cutting board. Cut into pieces.

I have successfully veganized Alton Brown's recipe using Earth Balance and Silk Creamer.

It's a traditional cooked fudge, so it's a little bit fussy, but it tastes like the fudge my aunt made every year and that makes me happy. It's really good with hazelnut flavored creamer, like little nuggets of nutella.

Mmm yeah. A friend made me that recipe and it was sooo good. She also left out the shredded coconut, and used almond milk instead of coconut milk. I am going to make this fudge with macadamia nuts for Xmas.

that's awesome! when i was a kid i tried a bunch of times to make traditional fudge, but i always screwed it up. If I could make this vegan i would be so happy with myself!
