So tomorrow I would like to make the banana split cupcakes from VCTOTW, but I would like to make them gluten-free for my sister-in-law. I want to try to use the gluten free vanilla cupcakes from the book, so do you think I could just put a mashed up banana in the recipe or replace the flax seeds with it? Banana and ground flax seeds are binders, right?
Or, if anyone has a good gluten free banana cupcake recipe that is tried and true please let me know!
I see I'm a few days late but for future reference, yes, add a mashed banana to the gluten free recipe as well as the flax that's in the recipe. They always work out really well ;)
