Holy smokes that stuff is great! I don't remember why I finally bought some but I did and had the bag in my pantry so I made pancakes with it. Best ever. Best! So soft and tender....then I had to make an emergency batch of cinnamon rolls and discovered I didn't have enough white flour so I used 2 cups white flour and 1 cup spelt flour. Oh my...the most heavenly soft fantastic decadent cinnamon rolls ever.....

Yeah! This happened to me too. I guess since it's lower gluten I expect it to be kind of crumbly and dry and dense? But it's really not.

I really enjoy spelt in a pie crust for savory pies, such as the mushroom leek in Vegan Brunch.
