I'm also not sure how I feel about "uneven shaped pasta"....

HAHA didn't even notice that. Also "ear-shaped pasta", that doesn't sound very vegan!

yeah. i'm all for trying! i just found the eggs and cheese thing funny! I emailed them to let them know that I really want to try their restaurant and that it was really cool that they had a vegetarian menu with seitan, but that eggs and cheese aren't vegan. I hope they respond to me. There do seem to be some other vegan options on the menu which I'm excited about. Chestnut flour pasta sounds kind of amazing.
