Which main dish shall I cook for my omni husband and I?

I hate the Fourth of July. But it is a rare holiday that my husband and I have off together and dammit we are gonna enjoy it, and we are gonna go see free fireworks. Great date for us. But what should we bring to eat?

I am making creamy avocado potato salad, and grandma's chocolate pie, but we'll need a main course. These are all PPK recipes, and I am open to other suggestions.

Pics will be posted in food porn when I make the meal!

I'm dutch, so I know very little about the Fourth of July, and what kind of food would be suitable, but just based on the potato salad I would say any kind of hamburger, or the sloppy joes.
Somehow I can't really see potato salad with curry tacos, but maybe that's just me.
When the bread/toppings/condiments are nice, the type of burger isn't really that important for me, so I wouldn't make them myself unless I really wanted to cook that day.
Most burgers do freeze well, by the way, so you could make them in advance, just freeze them separately on a parchment paper covered plate before you put them in a bag/box, that way you can easily take out as much as you need.

I'd think tacos and sloppy joes are too messy. If you're already making those other things, I'd probably just bring some sandwiches unless the fireworks are close enough that you can keep hot food hot.

The PPK blog beet burgers make a good cold sandwich. Or my fallback: tofurkey sandwiches. Not fancy, but tasty.

Hubby isn't a big fan of the tofurkey cold cuts, but he likes the holiday roast (or whatever it's called). But I think they only have those seasonally. Hmmm.

We are pretty close to the place. Keeping the food hot shouldn't be a problem. I am very good at packing picknics...or we can eat before we leave. After all, fireworks aren't until 9:45. We are defiantly going to sneak in booze because we are not paying for alcohol.

I'll bet I could make that bbq pb tofu with soy nut butter... (allergic to peanuts) That sounds tasty.

Wegmans here seems to have the roast all the time, plus there is a field roast one. I haven't tried the field roast cold cuts because they are frozen.

Any of those choices sound good to me. If you're still looking for ideas, I made a double batch of BBQ Ribz from Fat-free Vegan Kitchen tonight so I can pack the leftovers for tomorrow's picnic. Very yummy and easy with store bought sauce (I love Annie's). We don't mind eating them with our fingers.

Its raining here in Dallas, so we are gonna eat at home, and then see fireworks tonight (hopefully the rain will quit by then) instead of trying to picnick. The winner according to the poll is the quarter pounder beet burger, but we went to the store last night and got everything but the goddamn beets.

The good news is, we have all of the ingredients for the snobby joes and since it no longer has to travel we decided to make that. We have vegan burger patties all the time. Since we bought all the ingredients already, might as well make something from scratch. Thanks for voting (and sorry for my incompetence)! Pics will be in food porn by the end of the day, central time! <3

I think the beet burger was my suggestion unless I missed somebody asking earlier, so this makes perfect sense. I leave the grocery store without my main ingredient all the time.
