 Post subject: Here is a recipe for broad bean soup

Where I live, this hearty soup is very popular in early fall, when broad beans are in season. I created this version by mixing my mother's version with the Metro supermarket chain version and changing various things.

Some recipes with broad beans I've seen ask to peel the beans after taking them from their pod. Of course, you have to take them out of the pod and remove the stem attached to each bean, but peeling them after that has always seemed useless to me. In fact, I like them much better unpeeled.

• ½ onion, sliced in thin half-moons
• 2 garlic cloves, minced
• 2 cups of fresh broad beans without the pods (about 1 kg in their pods)
• 6 cups vegetable broth or 6 cups water + 1 tbsp vegetable broth powder
• 1 tsp dried savory
• 1 bay leaf
• Pepper to taste
• 1/3 cup wild rice
• 1 cup unpeeled carrots, sliced about 1/4 inch thick
• 5 unpeeled small red potatoes, in 1-inch cubes (about 1 1/2 cup)
• ½ tsp liquid smoke
Sauté the onion and garlic over medium heat in a big pot until softened, stirring frequently (I don't use oil, but feel free to do so).
Add the broad beans, broth, savory and bay leaf. Add pepper to taste (and salt if you want). Mix. Cover and bring to a boil over high heat. Then lower to medium-low and let simmer 35 minutes.
Add the wild rice, mix and cook 25 more minutes.
Add the carrots and potatoes, mix and let cook another 35 minutes.
Remove from heat, add liquid smoke and remove bay leaf.

Enjoy!

Oh yum !! This looks fabulous and I just happen to have some broad beans. Thank you for sharing.

I've noticed that there are different kinds of savoury at the store. My Newfoundland friends say that their savoury is the best. Any recommendations on the type of savoury to use ?

I've heard there are different kinds, but haven't come across different kinds myself unfortunately. I think any savoury you like the taste of is fine. I like to use it in mushroom-nut pâté too.
