This is definitely a TBT question to around 2010 and the old PPK forum.

I'd like to make JohnP's variation of Susie's Polenta Seitan for our Canadian Thanksgiving on Oct 10. We're visiting a remote cabin and I can send up supplies the week before so we don't have to lug a lot of stuff on the long weekend.

Basically JohnP has modified the spices in Susie's original recipe and suggested a sauce of VwaV Punkrock Chickpea Gravy. Has any one tried this recipe before? How did things turn out? Any recommended pointers or modifications? I tried to search our current forum archive but I think this was on the old forum.

This is the first time I've heard of this seitan. The recipe is unlike anything I've ever made! This is going on the short list of things to try soon.

If you try the recipe, please post your experiences ! I'm not sure if I'm going to have time to test it before Oct 10th but it is on our Thanksgiving menu for sure.

Both Susie and JohnP were fabulous contributors to the old PPK forums and are excellent cooks. I just never got around to trying their recipe for the Polenta Seitan. Now is the time!
