 Post subject: Vegan okonomiyaki

Hi,
I've seen some recipes using various egg substitutes and some using silken tofu. Which work the best? I was leaning toward the silken tofu since the omelettes in Vegan Brunch work well with it but I'm not sure how much to use. Any tips or does anyone have a recipe that works well?

I've made it using silken tofu with good results, but I'd like to try it with the FYH vegan eggs sometime.

Thanks. I actually found the FYH vegan eggs at the store so I'll try it with that.

Weird, I don't know anything about okonomiyaki, but this video popped up in my youtube recommendations yesterday: https://www.youtube.com/watch?v=Erv6H_OtvHo He doesn't use any kind of egg, just flour, water, and scallions. There's also no amounts listed there though, he just eyeballs it.

The recipe in Miyoko Schinner's book Japanese Cooking: Contemporary and Traditional is very good. I've made it twice. It uses regular tofu blended with water.
