I need to make lunch for some vegan skeptics and am planning to make a pot of minestrone. What is your best minestrone recipe?

Minestrone with White Bean

The recipe uses a pistou (basil, tomato, parsely) to ramp up the flavours.

A few subs:
- vegetable broth
- vegan parmesan (like Joanna's from Yellow Rose Recipes)
- I don't like spaghetti in my minestrone and sub a small pasta like ditalini.

No recipe, but one little tip for skeptics: beef/chicken flavored stocks are pretty great for veganizing those types of soup that would easily be vegan but usually aren't because omnis feel the true stocks are necessary. Some people think vegetable broth tastes "boring."

I just wing minestrone at this point, but another tip: a hearty splash of red wine will kick it up to the next level.
Also, make some garlic bread to go along with it.
