I really want to try veganizing this. I'm thinking aquafaba for the meringue component, obviously just sub vegan cream cheese, milk, butter. (HELLO MIYOKO'S!) But what about for the egg yolks? Pregan I was never a savvy baker about what egg yolks did for a recipe, so I don't really understand what the purpose of them here is. I have some Vegg I could use? Or silken tofu? I just don't know!

Input would be lovely, and then once I give it a try, I will post results for folks :)

it seems really difficult to do with egg yolks and with aquafaba not acting exactly like meringue in baking...

That looks like a beautiful cheesecake !

I've used info on the WAGASHI blog to veganize some Japanese sesame paste desserts. There is a recipe for Japanese style vegan cheese cake but the texture doesn't look as light and creamy. The recipe uses a combo of vegan cream cheese, soaked cashews, coconut milk and egg replacer.

Yay, thank you! I think I'm just going to go on a cake-making bender and stuff cake into my friend's faces every time I see them. Bring cake to work. Hand out cake to public transit workers. I think this is the best plan.

I think egg yolks primarily add richness to a dish. I think the Vegg often makes a good sub. Good luck, this sounds amazing!

Richness but also fat - make sure to add more fat when subbing egg yolk
