I shouldn't even bother posting my picture of the fall harvest butternut squash and kale thing, as it was covered in gravy and other things and I took the picture while I was full of wine. But it was really good, the pecan parm really made it into a nice side dish that was filling enough for me to eat as a lunch one day. (from the first book)

I am going to try the cauliflower Alfredo from the blog tonight. It seems to use a surprisingly small amount of cauliflower (4 cups!) which is maybe 1/4 of what I thought was a medium head I had in the fridge.

I made the balsamic maple garlic tempeh from the first book. I cut down on the balsamic & subbed roasted garlic seasoning for the fresh. I've had much better roasted tempeh. It didn't seem to have a lot of flavor and came out somewhat oily.

The cabbage soup in the new book is really good. She calls it spicy in the title, which it is not, but I love cabbage and it is tasty and healthy feeling.

The grilled portobello mushroom bowl is so good. Mr Moon is not a massive mushroom fan like I am, but he was raving at how good the mushrooms were. The cauliflower mashed potatoes were delicious. I could eat a whole lot of this meal.

I made the chocolate hemp shake, but added spinach because I had it for dinner. It was good but I wished I had made the full recipe (I halved it) for a meal. My non-vitamix was fine with the hempseeds.

Also made the flourless brownies from OSGEveryay and they are SO good. Super fudgy. Of course it takes half a thing of almond butter to make one tiny loaf pan of brownies (you don't even get a normal 8x8 pan) so I'm not rich enough to make them regularly, but they'll be a treat. The recipe is also oil free, for anyone watching that (but not low fat because 3/4C of almond butter).

eh the cauliflower Alfredo was kinda meh. Bit bland and gritty. It might be one of those recipes where you need a Vitamix or 500$ blender.

Maybe try it if you have a high speed? I used my food processor but I couldn't get it smooth enough. I would also add more garlic and seasoning.

I am going to throw the rest of this into AFR Caulipots cause I don't want to waste it.

Finally got around to making the Tex-Mex Casserole that everyone loves (from OSG1). Yes, it was scrumptious. Topped it with a few chips and some avocado. So.much.flavor! https://www.instagram.com/p/BL2FbWIlTLu/

I made the Pumpkin Oat Squares from the blog for breakfast this week. I used 1/2 almond flour, 1/2 white spelt and skipped the chocolate chips. It's a super sticky dough (which I hate) and kind of a pain to even out, but they're tasty. Kind of sticky & crumbly at the same time, but the oatmeal flavor really comes through, although the pumpkin less so.

Looks like my ebook copy of the new book will finally be available soon. Poor timing. :( I'm going out of town at the end of the week, then have in-laws in over the weekend, so that was probably my last recipe for the challenge. Last challenge recipe ever? I certainly hope not, but so far I can't get into Reddit very well. I love the challenges though, so I must push myself!

I also made the casserole everyone loved! It was tasty but I was still a bit underwhelmed. I kinda wanna use it to make burritos or enchiladas it just felt like more work then pay off. It's not bad, it's just not mind blowing and the texture is a bit weird for me.

Creamy thai carrot sweet potato soup from OSG2 is good. Not amazing. But good. Was more impressive the next day, but I felt it really wanted coconut milk or something. Almond butter is millions of dollars so if you can sub with peanut butter or something less expensive, do, because I just happened to have almond butter in the fridge but I treat it like it is gold it cost so much. Was lazy and used tamari almonds from the bulk store instead of making my own.

Tomato barley risotto from the early days of the blog was a surprise hit. The ingredients were too simple, and I really doubted it. But it was easy to make and surprisingly tasty. Reminded me a bit of the sauce from canned alphaghetti/spaghettios which is one of the few non vegan things I miss. I will use this sauce as a base for future home made alphaghetti.
