I like to keep it simple, most of that science stuff is too much of a hassle to bother with.

For a 5 gallon batch:
1 gallon agave nectar (any kind should work)
4 gallons water
1 vial/pack of champagne yeast
a little "yeast nutrient" (you can get this at homebrew stores)

Heat up 1-2 gallons of water, mix in agave until it's dissolved. You don't need to bring it to a boil, as long as the water is reasonably clean.
Meanwhile, add the rest of the water to your bucket/carboy. Once the agave is dissolved, pour that in there too. A big funnel of some kind helps immensely.

LET IT COOL A BIT

if you don't, and it's too hot, the yeast will die and then you're SOL (not really, you'll just need to go get more yeast). 80-110 degrees is the right range I think. once it's cool enough, throw the yeast in there and add a little yeast nutrient, and you should be good to go.

Then just cork that shiitake up with an airlock and let it sit for a good long time. My last batch was in there for about a year because I forgot about it. You don't really have to wait that long though.

After that, you just bottle it like beer (plenty of tutorials around the 'net for that). If you don't want it carbonated, skip the step with the priming sugar, but I like the carbonation.

Serve chilled, die from diabetic shock because this shiitake is sweet. It's also surprisingly strong, so be careful.

7. Eat warm.

Greasy nooch noodles in salt sauce! I ate this for dinner last night and thought of the PPK.

Is there an official recipe? I always use pasta, EB, nooch, salt, pepper, and a bit of dijon.

Mollyjade, only real thing I had was Esme's special sauce.

I've added all recipes so far.

If anyone wants to edit the wiki in general, I figured out an issue just due to the reddit being new in that we will have to create pages and add editors to each page. If anyone has a page idea, let me know, I can create it and add you as an editor. Just msg me on reddit (Lina4Lina). Eventually, as people post more on reddit, they will have permissions to edit the wiki without being added to each page.

I think Dr A was also looking at scraping. I had a wget running that grabbed a ton of pages but I had it on my laptop and stupidly closed it. I can re-run it on my desktop. If I can get them in html format on my computer, I can make it easier. I found if you do the print format(append &view=print at the end of the url), it helps some but you need more than that.

So many wonderful recipes ! The new ThePPK wiki on Reddit is look'in good. Thank you to all who are working on this.

I learned to make seitan from Joanna's PPK posts and links to her website. Her recipes are solid and her explanations straightforward. Her website no longer exists but perhaps some one who is in contact with her could ask permission.

When I first joined the PPK in 2008, I was working in remote rural areas, often without internet. So when I finally connected to the web, I downloaded the PPK recipes I liked to take them with me.

It looks like I found at least the Seitan cutlets/seitan troubleshooting from the internet archive, I'll try to find more.

I do have all of Joanna's seitan recipes that I posted above. I'll be back at home this evening and can send them or post them. How do I get them to you ?

I'll edit the French translations in the Chef Michael Makhan (Aux Vivres) thread so we can bring those recipes too.

The only thing that I couldn't find online is the chicken-style seitan and as far as I can tell, the chicken-style seitan and the seitan cutlets are very similar.
