 Post subject: Favourite weekday savory hot breakfast?

Hi everyone!

I'm struggling. i need a protein rich fast weekday hot breakfast. I dont live in the states so dont have access to a lot of vegan convenience food. please help with your awesome ideas

I've been having beans and rice (various types, whatever I have). I know that's not very breakfasty, but it's filling and good.

tofu scramble is my go to. I just season with turmeric, paprika, garlic powder and nutritional yeast.

Anything is good for bfast... Add avocado and tomatoes and you're good to go :)

I always mean to make a big batch of tofu scramble on my day off and portion it up for work days. This rarely happens. If you are more organised though, another great thing about scramble is that it is so delicious with vegetables- onions, mushrooms, carrot but also so lovely with spinach on the side! Greens and protein for breakfast.

Isa's chickpea scramble is good as well.

Do you have a microwave? In the UK we can buy baked beans in microwaveable, individual serving pots. You put one in the microwave for one minute then could eat them with a spoon straight out of the pot, or have on toast if you prefer.

If you can't find those, you might be able to get baked beans or some other type of bean-in-sauce in a tin. In the morning, open the tin, pour into a microwaveable bowl, put a plate on top, then heat and eat.

Or just make an extra portion of a protein-rich dinner, store it in the fridge overnight and heat in the microwave in the morning. (Something not fiddly to eat, and which doesn't have different components meant to be served cold or whatever. So a stew or curry or casserole or something.)

I like hearty whole grain toast with hummus on top. It's super filling and protein heavy.

I will also just put a dollop of microwaved vegetarian refried beans and a few spoonfuls of jarred salsa into a whole wheat tortilla.

What I'm saying is eat beans, ha ha!
