I am not a big fan of sweet potatoes, but I had some delicious roasted root veggies from whole foods a few months ago and I don't know how they achieved such awesomeness (those SP were really good).
Since I only recognized sweet potatoes from all the veggies I would love if you, lovely and savvy PPKers could enlighten me.

Which root veggies are your favorite (or which r. veggies are more common) and what do you use to roast them?
Olive oil? Sea salt? Herbs?

I love roasting sweet potatoes with a bit of olive oil, some lime juice, and some fresh cilantro! Amazing!

It's been my experience that roasting automatically achieves awesomeness, no secrets! I like to roast potatoes, sweet potatoes, parsnips, carrots, brussels sprouts, turnip, taro, squash.....

A lot of times I just use oil and salt and pepper, but I'll also use spice blends that I like, sometimes a little orange juice depending on the vegetable. I recently tossed brussels sprouts in a garlic dressing that I had made before I roasted them...I just wanted to use it up, and it turned out really yummy.

I will roast sweet potatos, mushrooms (put them in towards the very end), onions, fennel, and I love to shove an entire head of garlic or two in because roasted garlic is the food of the gods.

I use a ton of cumin along with olive oil and salt

Make the marinade part from the maple-mustard roasted potatoes and string beans in VWaV and pour it over the root veggies of your choice. Roast accordingly. So, so good.

olive oil, salt, pepper. sometimes i'll get fancy with regular potatoes, but for any other root vegetable this is all i want.

All I ever use is good olive oil, kosher salt and rosemary. But I don't think you need to do a lot to sweet potatoes to make them glorious.

I roast almost everything at high heat (at least 425). I got a lot happier with my roasted vegetables (especially potatoes) after I started doing that. My favorite thing to do is roast a mix of potatoes (or sweet potatoes!), carrots, and onions after tossing them in pesto. So good.

The secret is high heat, a light coating of oil, and enough space that everything can be spread out in a single layer. If you have buried veggies, they'll get steamed instead of properly browned.

My favorite is sweet potatoes, russet potatoes, onions, and cloves of garlic (I put them in in their skins and squeeze them out after...it looks pretty in the bowl with the veggies) lightly coated in olive oil. I add sea salt, black pepper, some thyme and sage and that's it. I cook them in high heat.

I eat roasted root vegetables all year round. Sweet potatoes, carrots, fingerling potatoes. Just had parsnips for the first time and they just tasted exactly like carrots. I hear roasted beets are good, but I've never had them.

My two keys for delicious roast veg:
* olive oil, smashed fresh garlic, kosher salt, freshly cracked or ground pepper, lemon juice, chopped up + whole sprigs of fresh rosemary
* roast at 400-425F in one layer (big cookie sheet with a rim) for about an hour, stir a few times, crank it up to 475-500F for 10 minutes or so to make everything extra-crispy on the outside

Don't be afraid to use more salt than you think you might need!

I love roasted root veggies. Lately I've been just roasting up everything that's leftover from the week's CSA bag; roasted at 425 with olive oil, sea salt (sometimes smoked) and pepper. Sometimes I use...steak seasoning...I know I know, sounds gross but it's so savory and it's vegan! My fave roasted veggies are carrots, beets, parsnips, turnips, sweet potatoes, potatoes...oh I guess pretty much everything! Also, in the summer, roasted green beans are the bomb!

I like maple syrup, ginger, garlic and sea salt OR curry powder on my roasted veggies. Some of my favorite veggies to roast are sweet potatoes, carrots, pumpkin, brussel sprouts and green beans. I recommend tossing everything together (veggies, oil, seasonings, etc.) in a bowl instead of drizzling/sprinkling ontop of the baking sheet.

Wow, i am surprised no one has said Balsamic vinegar! I like that and some olive oil and some herbs (usually rosemary) on my roasted veggies.

some awesome ideas on here though. I have a potluck at work next friday, which i was going to bail on as always. Now though I am thinking roasted veggies. those taste good at room temperature too

I'm roasting some russet potatoes and sweet potatoes right now!

I was going to use olive oil, sea salt, thyme, black pepper and maybe something else, but instead, I used leftover mustard-maple dressing from vcon, water, extra salt/pepper and thyme : D

We'll see later if it was a wise choice (it seems like it will be : D).
