Is there any way to find/access that or bring it back? I was really hoping to find the recipe for some polish sausage to try to veganize a family recipe from my childhood that I was craving. Thanks :)

1/8 teaspoon chili powder [or more to taste]
1/4 teaspoon mace *

1 tablespoon paprika [tester recommendation: reduce paprika to 1-2 tsp]
1/4 teaspoon ground bay leaf
1/4 teaspoon sage *
1 tsp liquid smoke

*if you want a clearer taste with fewer spices, bump up the dried thyme to 1 tsp and leave out the mace, allspice, and sage


BANGERS (ENGLISH)
1/2 tsp ground white pepper
1/2 tsp mace
1/2 tsp ground ginger
2 tsp rubbed sage
1/2 tsp nutmeg
dry toasted bread crumbs


BANGERS (OXFORD)
1/2 tsp marjoram
1 tsp dried sage
1/2 tsp black pepper
pinch cayenne
1/4 tsp mace
1/2 tsp thyme
2 tsp lemon zest
1/8 tsp nutmeg


BRATWURST
1 tsp onion powder [tester recommendation: or a little less than 1 tsp]
1 tsp garlic powder

1 tbsp sugar [tester recommendation: a bit less sugar - 1 to 2 tsp]

Darn, I am about to make the ukranian sausage variation above, and I wanted to click on the links for other kielbasas in vegimator's post. THey don't work though, because they are shortened. Anyone happen to have the whole links?

(I googled for "Polish Kielbasa Apple Grass" and "Smoked Polish Kielbasa , Butternut Squash, and Wild Rice Soup Annakarenina" but no luck.

For the record, I used vegan dad's breakfast sausage recipe, except with white navy beans, and left out the maple syrup and spices. Then I used the Ukranian spices listed above, with 1 tsp mustard seeds & smoked paprika. I forgot to add the all spice though. It was soooo good! I will definitely make these again.

Definitely. They're just as awesome frozen. I just cook them as normal and leave them in the foil to cool and stick them in the freezer just like that.

I make it for just two people also, but shape the vegan dad breakfast sausages into just 4 large sausages and steam for 40 min. They aren't even that high calorie - only 6 WW points per large sausage, which isn't too bad.

Sure, it is a big serving - so maybe if you have a small appetite or a lot of sides you could make it into 6 servings. But they are so yummy we have no problem with the leftovers!

OK, I make the italian sausage and we froze most of them. Had some for dinner tonight. My wife sauteed two up in a frying pan...OMG, they were so damn yummy. I can't wait to try the other variations. I want to make hot dogs for our summer family bbq.

Just discovered the wonderful world of PPK and can't wait to try making the sausages!

I have one question on freezing them though, do you defrost before cooking?

Yes, defrosting is the way to go.
If you are going to fry them whole, defrosting first will ensure that they heat all the way through.
If I want to use them sliced, I sometimes defrost partially, just so I can get the knife through and then fry them/simmer in a stew until they are browned/hot.

For even more (you have to divide the 10lb recipes by about 5 unless you want to make ALL the seitan, but...) I recommend Rytek Kutas's "Great Sausage Recipes & Meat Curing." It is the least vegan cookbook ever, or was until I got my hands on it.


ETA a couple of my own recipes:

SUMMER SAUSAGE (recommend steaming, then baking to dry out)
1/2 c. navy beans
2 T miso
1 T liquid smoke
1 c. fake beef broth (I used 1 t. "better than bouillion" no beef base with 8oz water)
1 T non-hydrogenated vegetable shortening
1.5 T sugar
1 t. salt
5/8 t. black pepper
5/8 t. ground coriander seed
1/4 t. powdered ginger
1/4 t. garlic powder
1/4 t. ground mustard seed
1/8 c. nutritional yeast (nooch)
1 1/4 c. vital wheat gluten

GYROS (I make it in one giant log and steam for about 75 min)
1/2 c. cooked beans (I used navy, but other choices will work)
1 t. Better Than Bouillion "no beef" base
1 c. unsalted homemade vegetable stock*
1 T. vegetable oil
4 cloves garlic, peeled and minced
1 t. salt
3/4 t. dried marjoram
1/2 t. ground coriander
1/2 t. coarsely ground black pepper
1/4 t. dried savory
1/4 t. dried thyme
1/2 t. dried rosemary, crushed
1/8 c. nooch
1 1/4 c. vital wheat gluten

MANGO SAUSAGE
1/2 pinto beans
1/4 c. chicken style marinade (see below)
3/4 c. vegetable broth (mine was unsalted, homemade)
1 T vegetable oil
1 T maple syrup
2 garlic cloves, minced
1/3 bunch fresh cilantro, minced (about 1/4 c. packed)
2 t. salt-free jerk seasoning
1 t. salt (or to taste)
1/8 c. nooch
1/2 c. finely chopped dried mango slices
1 1/4 c. vital wheat gluten


Chicken-style marinade:
Combine 2 T powdered chicken-flavored vegetable seasoning (I use Le Chikky), 2 T barbecue sauce, 1 t. vinegar, 1/2 c. hot water, 2 T soy sauce, 1/2 t. poultry-style seitan herbs, and some freshly ground black pepper.
