My son has requested a recipe I used to make before I went vegan a couple of years ago. The recipe, "Cloud Cakes", aka sour cream pancakes, is primarily egg and sour cream with a bit of flour, baking powder and salt:
2 eggs 1 cup sour cream 1/3 cup flour 1 teaspoon baking powder 1/8 teaspoon salt
I can substitute a non-dairy sour cream and/or non-dairy yogurt, but what will mimic the texture of the egg? I doubt the standard Ener-G egg replacer will be sufficient. These pancakes were very soft and moist, in between the texture of an omelet and a pancake.

People usually find that if replacing a large amount of eggs, it is a good idea to go with a variety of egg replacers. Check out the baking section here for egg replacement ideas. I'm guessing maybe a combination of tofu egg, flax egg, and boxed egg replacer. But I can't promise it will work. It sounds like something you are going to have to experiment with. Good luck!

I'm so confused as to what the original recipe looks/tastes like. there's barely any flour, so it can't really be a pancake. I googled cloud cakes and only found cakes shaped like clouds. Do you have a picture or something? If it's close to an omelet, maybe take a look at isa's omelet recipe in vegan brunch and add flour to that? I dunno!
