I thought I had everything to make this but I must be out of French lentils! Is there any particular reason it has to be the French kind? It seems like since the whole thing is processed in the end it wouldn't matter that much but I have never made the recipe before. I have every other kind of legume.

I've never made this recipe, but French lentils take a bit longer to cook than other lentils. I don't think this would matter for this recipe, though, since the only danger in slightly overcooked lentils is that they'll get mushy.
