 Post subject: How to keep brown sugar good.

So I don't bake or use brown sugar very often... So, of course, since you can't buy smaller bags of brown sugar (not for cheap anyway) it ALWAYS gets dry/hard by the next time I need it. How do I stop this from happening? Can I refrigerate or freeze brown sugar and it still be fine? Any other tips on this would be great.

My mom taught me to put a saltine cracker in a container of sugar to keep it from clumping. It absorbs the moisture.

I was told to add a slice of bread to my sugar to absorb the moisture but then breadcrumbs get into the sugar.

An airtight container (like Lock & Locks, my favorite) have kept my brown sugar soft for over a year at a time.

Wait... Would you WANT to pull moisture from brown sugar? That seems like the opposite thing you'd want...

Airtight container? Like any of the locking kind or is yours something that sucks out air?

I've used bread, apples, and microwave. Here is a link that has many suggestions. It also says you can freeze it.

You do want to pull moisture out of the sugar. The moisture is what makes it clump together and get hard.

I just put mine in a zip-lock bag, and make sure to get all of the air out of it before closing it. It's worked well for me so far.

They sell this thing at whole foods called a Brown Sugar bear or something (its like $3) that you get wet and then put in your brown sugar and it keeps it from clumping. I bought one for my cousin for xmas, but I have no idea how well it works.

And no, moisture is good. It's when the moisture evaporates that makes it clump. Keeping it in airtight container keeps the moisture locked in and keeping moist things like apples and bears in the bag just bring in more moisture.

I just keep mine in a canister thing, one of the ones that comes in a set of three (usually with 'tea', 'coffee' and 'sugar' printed on them). It has a really tight seal, like so tight that it's really hard to pull the lid off and I occasionally struggle and then pull with such force that I fling the lid into my face. It works for me! But I also go through brown sugar far more quickly than I should probably admit.

I totally just had this problem! A friend told me to wet a paper towel and put it in the container. I had my doubts (and bought a backup bag), but it actually did work.

Could you stir in a little molasses to refresh dried out brown sugar?

I don't usually keep brown sugar on hand, just mix together a little molasses and regular sugar as needed. That's all that brown sugar is anyway.

when my brown sugar goes hard i stick a piece of bread in it. the sugar sucks out the moisture and becomes soft again. the bread becomes dry and hard. it takes maybe a day.

i also stick bread in with cookies i don't want to dry out.

I put it in one of our snap-lock containers in the fridge. Hopefully it'll be good next time I need brown sugar! Only time will tell... I use it rarely... Mostly when I make jerk sauce or SOME baking.
