Lately I've been making baked oatmeal as a weekend treat, really easy and sooo delicious. I based the recipe on a non-vegan one so here's my adaptation:
(Makes about 4-6 servings, depending on how hungry you are)
1/4 c sugar 1/4 c vegetable oil 2 tbsp maple syrup or agave or whatever 6 tbsp unsweetened applesauce 1 tsp vanilla extract 3/4 tsp baking powder 1/4 tsp salt 1 1/2 c rolled oats 3/4 c milk (soy, rice, almond, whatever you got, preferably unsweetened) A couple dashes of cinnamon A handful of raisins and maybe even walnuts (depending on your tastes)
The night before, mix everything together in a bowl, cover and refrigerate. You can skip this step but it really is better if you let everything soak together overnight. Preheat the oven to 350 and lube up a baking dish with Earth Balance or whatever you have. Spread the oatmeal mixture evenly in the pan. Cook time will vary depending on how big your pan is and how thin you've spread it -- ours is about 8x11" (so spread pretty thin) and generally takes about 15 minutes to bake, but it will probably take a little longer in a smaller pan. You'll know it's done if you give the pan a shake and the mixture doesn't really jiggle anymore. Serve with warm fruit on top.

I'm usually boring with oatmeal I usually just add some fruit spread or pure fruit jam then add in bananas. I've made a PB&J oatmeal before which was yummy. I think I want to try a carob banana oatmeal soon.

there's another overnight method I didn't see mentioned here, good for steel cut. Use 2 cups water per 1/2 cup oats (I always add a pinch of salt). Bring to boil and let it go for one minute, then turn off heat and put a lid on it. In the morning stir, maybe add a bit more liquid to get the texture you like and heat a few minutes. Done.

I have run out of my standbys and have moved to a type of oatmeal additions that I doubted would be good, but were great!
cooked oatmeal, ground flax, sugar, salted peanuts, chocolate sauce, almond milk

You guys are inspiring! I had been stuck in an, albeit, delicious rut of flax seeds, maple syrup, walnuts, and fresh apples. Today I tried flax seeds, peanut butter and brown sugar with pineapple. I think next time, I'll swap the pineapple for dried coconut, but the possibility of combinations now seems endless! :)

I change it up all the time but my recent favorite sounds plain but sooo good. Cook with 1/2 water and 1/2 milk and pinch of salt. Stir in blob of strawberry jam and teaspoon of earth balance and a splash of milk.
Other favorites are cooked the same way, then topped with sliced banana, blob of peanut butter and jelly, or coconut. Or molasses / brown sugar / cinnamon.

I just found out that my fancypants rice cooker has a timer and a porridge setting. I woke up to just-made steel-cut oats this morning. Best breakfast in a long time.

I love the "la dolce vegan" for Baked Apporidgy. It's got walnuts, raisins, cinnamon, nutmeg and flax but what really makes it is the MOLASSES! So so good. I bet it would be yummy in regular oatmeal too.

When I was living in winter hell I used to come home from class in the afternoon and make oatmeal with frozen strawberries I'd heat up, then add walnuts, chocolate chips and a drizzle of maple syrup. It's probably far too sweet for breakfast, but as a warm treat on a cold, miserable day it was the best!

Another way I like to make my oatmeal is with a bit of cinnamon & almond milk. Then add sliced bananas to the bowl, a drizzle of molasses, and a sprinkle of sunflower seeds.

pumpkin, cinnamon, and maple syrup. I like to cook oatmeal in milk (soy or almond) too, I think it tastes better than when it's cooked with water.

I like my oatmeal plain! I think it's delicious on its own.
However, I do occasionally add in some sliced banana.
It's my favorite breakfast.
