as usual, i will be spending christmas with my omnivorous family, and would rather not be stuck with just vegetable sides for dinner.
i'd like to make some sort of mini seitan loaf (just enough for me), with mushroom gravy and cranberry sauce.
i'm asking for your best recipes for the above items, particularly the seitan; how should i flavour the dough (i'm thinking nutritional yeast, and.. well, i don't know what else)? what's the best way to prepare it (i usually break it into small bits and toss them in a pot of boiling water for a bit; how would i go about getting a firmer 'loaf')?
