 Post subject: Ideas for single-serve entree for omni dinner?

My partner and I are going over to his aunt's house for Christmas dinner and she has gone out of her way to accommodate me - I even feel a little self-conscious about it, but I'm trying to swallow down that weirdness and just appreciate all that she's done.

She's made a celery soup just for me with veg broth, some amuse bouche things with veggies (leaving off the creme fraiche), two kinds of vegan cheese for the cheese platter (I think she got Cheezly), she's making the mashed potatoes with soya butter, and she even made a homemade vegan ice cream with coconut milk, hazelnuts and caramel. I'm blown away.

She offered to buy me something to make for an entree, but I said I would just bring myself something. What would be a good single-serve entree to eat while everyone else is having lamb and turkey? I want to make it ahead of time and just reheat it at her place.

Ideas?

I always try to bring something that would go with the non-vegan meal. That way you will have something to eat and you can offer it to the others as well. I generally bring bean dishes. Everyone likes Chickpeas Romesco. I've used that a few times, it reheats well and it goes well with potatoes. Another option is a bean and green dish but sometimes the greens get icky looking with reheating.

i would bring something to share with everyone.

but if you want to do a single serving thing, i think stuffed squash would work really well.

I can do that, too, but I'm worried that might seem rude. I haven't quite figured out the social mores over here. I'm down with bringing something that's not technically single-serve and that others can eat, but no one probably will. Leftovers for me.

I'm just at a loss for something to make. I have things to make seitan.

I was thinking seitan piccata, since it would work well with the mashed potatoes that will already be there.

Wow! Your partner's aunt sounds lovely! I think the stuffed squash sounds great.

I'd ask your partner how your aunt would feel if you brought something to share. I know people sometimes get squirrely about "their" holidays and don't want anyone else cooking or providing food.

The chickpea picatta is also terriffic with mashed potatoes, and it's beans, so maybe others wouldn't be afraid to try it.

I have everything for chickpea picatta right now...even the wine! Do you think it will reheat well? I'm not cooking anything in her kitchen. Making it at home and then bringing over.

Yes for sure. I had leftovers for luch the next day and it was wonderful.
