Had very good spicy roasted chickpeas at a potluck last night. Apparently the secret to their goodness is to put the spices, flour and oil on in layers before baking. Using the chickpea flour produces the best results -toasty/smoky flavour - but you can use all purpose flour too.


Roasted Chickpeas - Bangladesh Style

1 – 15 oz can chickpeas (425g)
1 tsp ground coriander
1 tsp ground cumin
pinch – ¼ tsp cayenne pepper
salt to taste (1/2 tsp approx)
1 tbsp chickpea flour or all purpose flour
1 ½ tbsp oil – olive or canola
pinch chaat masala (or other spice blend – optional)

Oven 400 F

Drain, rinse and dry chickpeas. In a small bowl, mix all the spices except the chaat masala. Sprinkle the spices on the chickpeas and toss to cover evenly. Sprinkle in the flour and toss again. Sprinkle in the oil and toss again.

Place chickpeas in an oiled baking tray. Bake 15 minutes. Stir chickpeas and bake for another 12 minutes or until you get desired crispness. After baking, add the final optional spice blend.

Interesting method! I've never met a chickpea that I didn't like, and that sounds extra yum.

OH MY GOD YOU'RE IN MY HEAD! I planned on making roast chickpeas today AND I got some Ethiopian spice mix (and a couple of other tasty mixes) at a fancy spice shop yesterday.
I cannot wait.

SAVED. I was also thinking about making roasted chick peas today, too bad I only had one can of chick peas and I used it to make hummus!

I've made this recipe 3x now and I'd suggest an oven temp of 350-375 F instead of the 400 F in the original recipe. The coating with the chickpea flour turns dark quickly at the high temp - before the chickpeas are nice and crisp.

I'd like to update the 1st post in this thread but can't find the edit button. Is the edit button gone or can I just not find it ?
