For the 500th forking time, when I am making nooch sauce that has to be whisked constantly, I am not going to stop and put shiitake away!

But if you put too much soy sauce, the curl won't brown. Perhaps that was MBM's concern? So get it a little brown, then give it some flavor, then proceed with browning. So I am on MBM's side there.

But I'm also on Brian's side because I think it's ok to say "baking in the flavor" even if you're sauteeing because it's a funny 70s cooking thing.

You never add soy sauce first to something that's going to be panfried for more than 30 seconds. Soy sauce will burn long before proper crispiness is achieved.

I'm pretty sure Chris and I have had this exact same argument. The worst is when I'm cooking at my mom's house and she puts shiitake away that I'm still using and then he sides with her about what a messy cook I am. Treacherous mustard!

I'm Team MBM all the way. Baked In Flavor™ is just another way of saying burnt soy sauce.
