I'm going multi-cultural this year and doing a few different things for NY(E) dinner (I'm making black-eyed peas and cornbread, as well as ->). I wanted to do a noodle dish, but most of the ones I can find are peanut-y and/or really super involved. Does anyone have an easy, tasty, peanut-free recipe for noodles (Asian-style, not chickpea noodle soup or something)? I suppose I could make yakisoba, but I'm looking for something a bit different.

I don't have a recipe, but I have soba noodles with scallions/sesame oil/sesame seeds/rice vinegar/garlic/ginger/salt to taste pretty regularly. Good hot or cold, but maybe not super authentic.

What about Singapore noodles? Soak rice noodles, stirfry vegetables, add some curry powder and soy sauce to the vegetables in the last minute or so, and add the noodles to the vegetables at the end.

Soba noodles tossed in toasted sesame oil and kimchee?

You (and everyone) need to try Bami Goreng some time. It's Indonesian fried noodles w/ ketjap manis (a sweet soy sauce w/ brown sugar) and sambal (like Sri Racha only 100x better). We ate this all the time growing up, but I need to get my moms recipe.

You can look at some recipes online. You'll obviously need to sub the meaty stuffs for something else.

If you serve that with some baked tempeh and lumpia you got yourself a fantastic Indonesian meal.
