So shortly before I went vegan I was really loving those meringue cookies you could buy in stores - specifically chocolate mint - drool! Anyone made a vegan meringue cookie?

I always assumed that was a vegan fantasy with all the egg whites. But maybe all these people working on vegan macarons might work something out.

I know Bittersweet has worked out a meringue recipe of some kind - I remember a picture being posted on her blog. I don't know if she ever posted the recipe though.

If you find one, pass it alone - I love love loved the chocolate chip ones.

I've got the Angel Foods mix and it's decent. The texture is similar to a very well cooked meringue, but the flavour is of icing sugar. You can add odds and bits to it though for different flavours and textures, so it's well worth a purchase and some experimentation!
