Sooooo... there's this underground Asian supermarket here in Philly (Phorum represent one time!) that is so much fun to wander around. And when I say "underground" I mean it's below street level, it looks like an underground fight club, and there's hardly an English word spoken in the joint.

Anyway, I've started to stalk their soy and bean curd products. I've started with the following: Soy puffs, Soy cutlets, and "stew bean curd" whatever that is. The "cutlets" and I have plans for tonight, but is there anything fun or useful to share about puffs and bean curds?

I have not the faintest idea what to do with any of those, but "soy puffs" is maybe the cutest name for a food product ever.

Where is this mysterious store located? Apparently I had a phorum fail and missed that.

I just created a thread for it. It should be celebrated (the store, not the thread) for it's selection, it's entertainment value, and for apparently staying on the right (or corrupt) side of the health inspector's office.

I've had tofu puffs! I recall they were good but I haven't the foggiest what I did with them.

Those soy puffs are your new best friend. I gave them up for health reasons but I love them in udon like I love my mother. I also just put them into stir fry because that is good. You could even slow cook them in bbq sauce. They are like wheat gluten but less healthy and more yummy.

I've seen those soy puffs, too, and also wondered what to do with them. Maybe they would be a good substitution for soy curls, which seem to be only available by mail on the east coast. The soy puffs are super cheap in international grocery stores.

Excellent. I think I will try two things with the soy puffs: fry 'em with the Trader Joe's frozen Asian veggie bag, and then I'll make some form of soup, by which I mean I will buy some form of soup, and add them. A BBQ slow-cook is actually tonight's plan for the "cutlets" I think.

soy puffs are usually eaten in soup/hot pot-ish type dishes. They're pretty good but sadly I can't ea them anymore either :(

Do you all cut the soy puffs into pieces? I threw them whole into a stir-fry type dish and was thoroughly unimpressed. They were chewy and tough and just...a mouthful.

I forgot to buy BBQ sauce so I had to cook the puffs. I ate half of the pack while cooking the other half in a stir-fry. SO GOOD. I totally see how they are addictive. I'm sure they could be put to MUCH better use than throwing in a stir-fry or in my mouth.

I like putting sliced soy puffs in salad rolls. Yum! The cutlets look like the stew bean curd I have bought here. I usually just use this in stir fry type dishes.

those puffs are teeny little aburaage- the kind you stuff to make inarizushi, or fry up to make kitsunedon, etc. you could search for abura age recipes.

as for those stew bean curds, the photo's not too clear but it looks like they're already flavored, and that stuff sliced thin and put on a sandwich with tomato and mayo and lots of pepper is fantastic.

I'm worried about those cutlets. I got something that looked like that once and it think it was called "marinated dofu" (not tofu). It was really gross. I ended up throwing it out.

dofu/doufu = tofu. I hope they are not gross though! How did the cutlets come out for you philadelphegan? The puffs sound wondrous. I will get some next time I go down there.

The puffs are so addictive. Heroin. I ate the whole pack last night.
The cutlets are tofu. They're pretty normal-tasting and solid like you'd want from a "cutlet". I sliced some over ramen, and ate some straight. Good stuff. Will probably cook the rest with broc and bbq sauce tonight.
And then I'll move on to the "stew bean curd" which looks the most ominous to me.

Mmm, I love a good bean curd...it's so delicious sliced up on a salad, or sauteed with celery and lily bulb (or any stirfry). I've never heard of "stew bean curd," and I wonder if it's different than what I get. Probably just means it was stewed in a sauce or something? You can always try a little and then decide what it would be good in.

the stew bean curd is just a really firm pressed, seasoned tofu. It usually has the texture of more commercial smoked type tofus.
