I have recently acquired a small jar of chili oil packed fermented tofu. I tried a piece straight up and it is really good but hella salty. Anyone ever had this before? It's very cheeselike and super strong.

There was a thread on the old forum sometime around 2006 with a faux goat cheese recipe involving strained soygurt and fermented tofu. It was a pretty neat recipe (too peppery for my taste but that's easily adaptable) but a cool concept in general. Anyone have this saved?

Ooooh that sounds good. Someone on that chow thread mentioned making it into a salad dressing since it provides an almost Roquefort cheese flavour and depth. It's really really really strong.

someone who has a blog I think uses the regular (not chili packed) fermented tofu to make a blue cheese sauce/salad dressing.

yeah we talked about it on the old boards. I use it to flavor my congee (porridge), which I learned about traveling in China. A cube of fermented tofu, some chopped cilantro, chopped peanuts, and maybe sprouts or pickled veggies. Mix it all into the steaming bowl of congee (which I've been making with adlay seed AKA job's tears, instead of rice). Yummy breakfast.

Been wanting to try those cheesy recipes.

I've got a jar in my fridge and whilst I don't outright dislike it, I do have a hard time getting past the fact that my entire flat instantly smells of baby nappies within a millisecond of the lid coming off.

You can stir fry chopped romaine with it. Just make sure the tofu is mashed up/liquidy and toss it in a wok with romaine until the lettuce wilts.

So far I have taken lycophyte's suggestion and added some smushed up fermented tofu to stirfried broccoli. Very yummy!

And I got Mr. Papaya to try some straight up without telling him what it was. heh. heh. heh.

I used to eat it with just steamed white rice. I like using it when I make kimchi too--just a dab to replace the fish sauce that most recipes call for.

The chili packed kind is good for mixing with sauteed greens. I like to cook up a whole bunch of gai lan and add some fermented tofu.

I just randomly picked up a jar of this (they had both the chile kind and the plain, and I went with the plain 'cause it seemed more versatile) last week. Pretty sure Bryanna uses it in some cheezy stuff, I'm gonna take a look at her archives this weekend.
