Onions first, even if I chop my garlic on the coarser side.

Onions first till they're browned a bit, then add the garlic.

onions first until soft - then i make a well in the middle of 'em and add in a gulp of olive oil. next i add the garlic to the well, let it cook there until fragrant (about 30-60 seconds) and then mix it in with all the onions. yum!

I've never thought to do that, that sounds like a great idea!

I do it both ways depending on the recipe. I like to get a super duper garlic hit in some recipes with a slow roasted taste, so I start the garlic in a cold pan with oil and slowly bring it up to temperature. When it is golden brown, I add the onions and a pinch of salt to bring out the water in the onions to keep everything from burning. It all depends on what you want the final flavor of your product to be. It works if you keep an eye on it.

I used to do garlic first, but several years ago, I started doing onions first. I think around the same time I started cooking more vegan food. I do recall adding garlic first, but I only cooked it for a few seconds. I tend to cook both at the same time if I'm not caramelizing the onions.

I do onions first. BUT, Dino (Alternative Vegan) said to put the garlic in the oil cold so as the infuse the oil w/ the garlic. I disagree. I think whatever flavor you get from putting the garlic in the oil cold is unnoticeable.

Onions first. Though sometimes I but both at the same time if I'm not going to cook the onions for too long.

I'll put them both together, unless a recipe really specifies that one goes in before t'other.

onions first, especially if there are other veggies (carrots, celery) joining the hot tub.

That makes zero sense. He also says not to cook with red onions! The horror.

Definitely onions first so as not to burn the garlic. Although, I have been known to put them in at the same time.

Unless Im trying to make garlic infused oil to cook with the onions always go in first. If I was just going for garlic flavor then I would throw the garlic in and let it brown and then take it out before adding anything else to the pan.

My mom taught me garlic first, but she was wrong. Alton taught me the right way to keep the garlic from getting burnt.

Always onions first, unless the recipe calls for garlic first but I have never seen that.

Onions first because that's what Isa's books taught me. Sometimes both at the same time.

Onions first cause they take longer, then I mince the garlic while the onions are sautéing.

For me it depends. I usually do onions first, cooking them until they are just about soft then adding the garlic. For something like pasta sauce, I usually just throw it in at the same time because the onions don't have to cook through completely for that kind of dish.

This thread has revolutionized my sauteing. It has never crossed my mind to do the onions first. Genius!

Onions first, unless I'm using a recipe that calls specifically for something different.
