So I'm making hummus for the first time, and just realized, as I was trying to grind up the chickpeas, that our processor is a piece of shiitake. It barely worked at all!
Anyone (on this vegan forum, i.e. hummus eating mecca of the world) have any tips or tricks for delicious hummus "ohne" food processor?

It's kind of a pain but you can hand mash the chickpeas with a fork or potato masher and then mix everything together. It might be easier to mash the chickpeas in the oil (like for chickpea cutlets) and then add everything else. It will be chunky but still delicious - I actually like chunky hummus better than the regular kind.

I've had a good deal of success with my immersion blender, though you do need to add a bit of liquid.

I also use my immersion blender (I don't have a food processor). It works fine, but it's true that you'll need to add a lot of liquid.

Those of you who use immersion blenders, how do you stop everything from flying into your face/onto the counters/into the dog's fur? I'm scared to use them because 1/2 of what I'm trying to blend ends up all over the kitchen.

I always use just my regular blender. Do small batches and add lotsa water.

For me it depends on how much I'm making. If I'm only using 1.5 cups of beans, I go blender. If I'm using 3 or more cups, I use the processor.
That business about taking the skins off - too much work! I usually cook the beans for an extra hour over how long I would for anything else and a lot of the skins come off, but I don't bother with the ones that stay.

My mom uses a mortar and pestle made of stone. I've never seen her use anything else. That, as far as she's concerned, as The One Way to make hummus. I've done it that way, too, but I have a Vita Mix now so...sorry, Mom.

I find it odd that people with immersion blenders are saying that you need a lot of liquid to make it work! My immersion blender pulverizes beans and things wonderfully with LESS liquid than I ever needed with either a blender or food processor! In fact I have to kinda remind myself to add enough liquid so that the hummus won't be too dry because I don't need as much strictly to make it blend, and then I also tend to add a little more lemon juice and olive oil after it's been in the fridge because the chickpeas tend to absorb a bit more liquid overnight and dry it out.

Yuppers! Peel your chickpeas. It makes for a creamier hummus and it's easier to digest.

I always add water to my hummus to smooth it out, otherwise it wouldn't come out super creamy. Just add a tiny bit at a time and keep working it. Beat adding more oil to make it smooth, I usually just use one tablespoon oil. Also, it thickens up as it stands. If I add just a tad too much water and it's a little runny, it will thicken up if I refrigerate for an hour or two.

1 can chickpeas
1/3 cup tahini
1 tbsp olive oil
4 tbsp lemon juice (and sometimes I add a little more of this to mine if I want a more lemony flavor)
and water a tiny bit at a time until smooth.

I don't usually add garlic to mine.

I wouldn't recommend using plain water myself, though I do use a little bit of the bean cooking water. Otherwise I'd have to use even MORE oil.

I made some hummus last week in my blender and it came out fine. I used an Oster blender, and if that can do it, any regular blender should also work as well.

After thinking about this for a while, I'm really motivated to try and make the best hummus ever with peeled chickpeas and a mortar and pestle. I should definitely use cooked from dry beans, so does anybody have any tips on cooking them? Mine often come out kind of tough and hard.
