The wee munchkin's birthday is coming up in February. Being the overachieving momma that I am, I'm making her birthday cake again this year. It must rock the house- oh yes, it must. Part of making it kick asparagus requires modeling chocolate. I've found a vegan recipe but I really need some white chocolate so I can color it. Does anyone know where to find some? Does it even exist?

Thank you in advance for the assistance!!! My wee munchkin thanks you as well for what will hopefully be a rockin' cake!

There is a recipe for it in "Vegan Substitions" It might be nice to make it from scratch if you need it for something specific.

My two cents - if you need it for modeling (I'm thinking this included tempering and whatnot) then I'd buy some pre-made stuff. I received some of the bittersweet blog home-made stuff in a care package swap and it was delicious but definitely not the same texture as white chocolate.

If white chocolate doesn't work would something like almond paste/marzipan or fondant?

Thanks for the suggestion/info. I might try a 'practice' round sometime soon w/the homemade stuff to see if it will work or not based on your findings. I might also try it w/the premade chips that a PP suggested for a side-by-side comparison.

I'll also be using fondant for the cake. I wanted the modeling chocolate specifically for the characters and the scenery on the cake that will be more three dimensional. (It's a Finding Nemo theme.) I could probably use fondant for them as well, but, modeling chocolate has more substance to it.

I ordered 3 bags of the white chocolate chips from Pangea and they are amazing!
I melted them down and made truffles and also caramel popcorn balls.
I would def. recommended them!

I want to to try one of the recipes because I've never liked the chips. Can someone tell me where I'm likely to find the cocoa butter and what kind to buy? The Vegan Substitutions recipe says to use "food grade cocoa butter." Whole Foods doesn't carry it and that seemed like my best bet. The Bittersweet recipe links to a photo of cocoa butter used as a moisturizer. Does it matter? I'm confused!

I'm not sure if/where you could get it in stores, but that's not a bad price comparatively. Also if you search Amazon there are tons of options.

Thanks! Maybe Michael's would have it, since they carry candy making supplies. I was trying to avoid shipping but King Arthur does look pretty reasonable (and I could then justify tossing extra goodies into the cart).

For anyone in the Philly area, Arnolds Cafe (a raw food cafe) just off the R5 train station in Lansdale PA carries it (at least I'm fairly confident they do). I believe they carry raw cocoa butter. I'll have to take a gander over there next week and check it out when I go back to work.

To the OP, I second the advice to use store-bought. I've done stuff with homemade and with the Vegan Sweets chips and I have a really strong inkling that the homemade stuff will turn to soup if you try to make modeling chocolate with it. Getting cocoa butter and making homemade is kind of a lot of trouble to go to just to have it not work. Chips are your friend!

And you could definitely model characters out of marzipan if the modeling chocolate or fondant doesn't pan out. It won't be as smooth/shiny, but it would still be super cute!
