I always get spoiled by my colleagues who bake vegan cakes for my birthdays. Now it's my turn to bake a cake, but my colleague has been doing weight watchers for some time now and while I guess she would skip it for her special day, I want to make an effort too. but all the recipes I've seen so far sound horrible. Arent there any yummy recipes out there? (Should I have posted this in the Spa??)

Isa's sexy low fat vanilla cupcakes were only 2 points on the old system, so on the new plan, it'll probably be 3 or 4 points each. And the fresh fruit topping should only be one point, I think. I'll find the recipe and type it in to find out the points for sure.

I know someone(the name is escaping me now) did WW points for all of Isa/Terry's cookbooks. Maybe you could look and see which of their recipes had the lowest points and then ask your colleague if it would be acceptable.

Okay, I figured the pointsplus values. With the icing and fruit toping exactly as written in the book, it's 5 points each.
I usually don't put the icing, though (because I'm lazy), and they're always just as good. And leaving it off saves a point.
What I would do is make them without the icing as mini cupcakes so that way they're only 2 points each.

You could do it as a cake, and just divide it into 12 pieces, but speaking as someone who is on WW, I'd prefer the individual cupcakes because it's much harder to keep from taking a little bit more and a little bit more when it's in cake formation.
