I just roasted chestnuts for the first time. It was easier than some people say, and they are pretty tasty. I was just wondering if there is something else I should be doing with them. Like, does anyone have any crazy chestnut recipes? I think I have a new favorite snack.

In the past I've made a nut roast loaf type thing with them, by chopping them up small, mixing with other nuts and adding to a "meat loaf" type recipe. I don't have a recipe and I can't remember which one I used, but it did work quite well.

Both Veganomicon and 500 Vegan Recipes have several recipes using chestnuts.

I love chestnuts in stuffing. For a sweeter option, you could try a chestnut pound cake, or just a chestnut cake in general.

I am eagerly waiting for chestnuts to appear in the stores so I can try the lentil chestnuts pate in Vcon. I dream about it...

Ahh, I love roasted chestnuts... I'm going up to visit friends in the country soon, and while I'm up there, I'm going to a chestnut picking party. We're going to be roasting freshly fallen chestnuts all day! :)

I just saw a roasted chestnut vendor here while I was out shopping. I wasn't hungry, so I passed them by without getting any, but now I totally regret it.

Mmm I want it to be chestnut vendor time here too now. Not long to go...
I put some in a pot pie for a christmas do last year, think it was mushroom and sweet potato.
