I totally forgot to mention an all-time fave. From Celia Brooks Brown's "Vegetarian Party Food" originally, here's my veganized version:
avocado soup
Mash together (makes kinda like a thin guac: 4 ripe avocados juice from 2 limes 3/4 c. soygurt 1 small onion, finely chopped 2 tomatoes, chopped 1 garlic clove, crushed 1 red chili pepper, deseeded and chopped finely salt and pepper to taste
Heat broiler.
Warm 3 cups vegetable stock until it's hot, but not boiling. Mix the stock into the avocado mixture and ladle into warmed, oven-proof serving bowls.
Top each bowl with tortilla chips and some daiya fake cheese (or your favorite melting vegan cheese - a little goes a long way here). Spray fake cheese with nonstick oil spray. Put bowls on a cookie sheet and under the broiler for a couple minutes until the cheese melts. Serve!

A spoon. Pepper. Salt. That's all you need to enjoy an avocado.

I have a friend who just kind of mashes them up with salsa to make a sort of guacamole/salsa hybrid. It's quite tasty.

I made some slackers guac and noticed how spotty they are already :(.
Slackers Guac: 2-3 Avocados 1 giant glove of garlic (2 normal ones) crushed dash of Cayenne pepper Lime juice
Scoop Avocado, crushed garlic into a mason jar. Sprinkle cayenne and juice lime until kinda wet. Attatch mason jar to blender and blend until smooth.

Mash them with banana, cocoa and sweetener of choice, freeze for 6 hours, defrost for 1.
Raw ice cream! It appears to be made of ingredients, but is actually made of noms.

I eat them on toast with Tofutti cream cheese and baby spinach. I go through a lot of avocados at impressive speeds when I'm going through a toast phase.

Over the summer I'll eat one a day. Watch out though, they are aphrodisiacs! I felt myself getting lusty over everyone.
Avocado, vegan sour cream, lime, salt, cumin, and paprika. MEAN DIPPING SAUCE. It's a little bitter, but it pairs well with savory entrees and goes great with anything fried/breaded.
