good morning. i was given a jar of pretty expensive chilli chocolate mole sauce at christmas (for those of us in the UK, it's from Hotel Chocolat so you know it's gonna be some quality stuff!), but despite being a fan of mexican/spicy food I've never actually made or eaten a mole sauce and I'm not entirely sure how to use this in order to do it justice. so, i'm looking for suggestions on how you, the PPK, would utilise such a thing?

You can make enmoladas! They're like enchiladas but instead of red or green chile sauce you use mole : ) Fill with veggies or your protein of choice (tofu, tempeh, seitan, beans, etc.), top with your favorite vegan cheese, broil and that's it : )
I could suggest more things, but it's getting late here, ha.

I use it the same way you would use a salsa. It makes boring rice bomb rice. Turns tacos into mole tacos!

My favorite is cooking seitan in mole, then making corn tortillas and eating tacos. Mmmm, tacos.

yeah, googling a bit had me leaning towards the enchilada route but i think that last one just swung it. they look awesome, so thanks for the suggestions!

It is good on beans, like on pinto beans or kidney, similar to baked beans but better. And tamales are good with mole too. Bread? Everything?
