 Post subject: Pumpkin Pie, coconut milk instead of evaporated milk

I'm making a pumpkin pie and was looking for alternatives to evaporated milk and found a suggestion of coconut milk. Which i have in the cupboard, have any of you used this? What have you used?

I swear by the vegetarian times recipe which calls for soy or rice milk. I have used soy and almond... but think that coconut would work too.

I made a recipe from vegweb with coconut milk and it was amazing and didn't taste coconutty at all. The original recipe called for regular non-dairy milk.

I imagine for subbing for evaporated anything would work as it is really thin anyway, coconut would just add richness. Sweetened condensed milk is the tricky one to replace.

heyyy what about mimiccreme? anyone every try? i usually use the bryanna clark grogan recipe but i was considering something different this year.

went with the coconut milk and it worked out great! Very yummy pie! Thank you guys for your suggestions!

Last year I used half mimicreme, half soy milk and it turned out great. I thought all mimicreme might be too rich.
