There is a really yummy miso roasted potato recipe is Vive le Vegan. I think it's actually the only thing I've ever used my tub of miso for.

miso squished with avocado is great on toast. or mix it with tahini to make an easy "cheesy" sauce/salad dressing. or you could eat it straight out of the packet like my toddler tries to do ;) but i wouldn't recommend it.

This is a timely thread. I just got a tub of red miso as a gift and I've never cooked with/used any miso before!
Links to online recipes especially appreciated. I think I'll try a miso soup today for lunch!

Soup, tofu marinade, mixed with nooch, tahini and lemon and tossed with pasta (something like that is in Extraveganza). I'll add more as I remember...

I love sweet white miso with tahini (equal parts of both), a touch of soy sauce, and either lemon or lime juice, plus a tiny bit of water (depending on how thin you want your sauce to be).... it can be a dipping sauce, spread, salad dressing, whatever. It's delicious.

I use miso in sauces/spreads instead of salt or tamari. A really good one is tahini-miso or almond butter-miso, about 1/3 cup nut butter to 2 tablespoons miso, or to taste. Some other ideas:
Creamy pesto sauce: Basil, avocado, miso, almond milk (or milk of your choice)
Kaffir Lime-Corn Soup from Millennium Cookbook
Eggplant slices with miso on top (traditional asian recipe)
Carrot Ginger Dressing Sauce: carrots, bit of ginger, water, miso

Ok this is going to sound silly, but where can I find Miso? I have never seen it at my local supermarket. Do they sell it at Whole Foods? Is it in the refridgerator section? What should I look for?

Your Whole Foods should definitely sell it. It should be next to the tofu and vegan cheese in the refrigerated section. If you don't see it there, ask someone, preferably someone who works the grocery department, because they'll know for sure.
There's also some packets in the International section, but I don't like those as much as the little tubs.
