Here in Russia we like our lard, specifically our sweetened cow-derived lard that's been segnificantly hardened to a pseudo-delicious cream with a puke tint. And because we like our lard, it goes frequently and in heavy amount into recipes.

So then. Any ideas for substitutions? v__v; Ones that would taste similar in large quantities in cakes and such?

You can substitute coconut milk in a lot of places for sweetened condensed milk. it'll taste a little coconutty, but that could be a good thing.

I think you just mean fat, not lard.

I've used the following recipe in baking before. Everything I've made with it has turned out pretty well...


Sweetened condensed milk

Mix together
Dry soymilk powder equivalent to making 3 cups milk. (3/4 C Better Then Milk brand powder)
3/4 C water
Heat until boiling point. (Microwave works fine for this)
In a pan on the stovetop Melt 6 T vegan margarine on medium.
Add 1 1/2 C sugar
When the sugar begins to melt
add hot milk and a dash salt
Boil gently and stir 5 min.

Cool and use wherever sweetened condensed milk is called for.

I wouldn't use coconut milk straight out of the can; it's just not thick enough. It's never worked for me, at least. Coconut cream should be thick enough though. I'd just sweeten it a little. I remember also seeing a recipe using coconut milk that thickens it up and sweetens it some time ago that I was waiting for the opportunity to try. Hmm. If I can manage to find it I'll post it.
