Our fifth week of our second Cookbook Challenge continues Monday, February 7th and this is the thread to post about your week. The book for this week is Eat, Drink & Be Vegan by Dreena Burton. You may also choose an alternate book and post your results here.

Choose 3 or more (or less) recipes from the cookbook of the week or the alternate and tell us about it! Post pictures, comments or anything you want here. If you choose to switch books around and do this cookbook on a different week, feel free to come back and post in this thread.

The following is the list of weeks coming up:

January 10 - Appetite for reduction
January 17 - Veganomicon
January 24 - Urban Vegan
January 31 - Vegan with a Vengeance
February 7 - Eat, Drink & Be Vegan
February 14 - FREE choice week - Choose any cookbook. Dessert cookbook will be Vegan Cupcakes Take Over The World or other.
February 21 - 500 Vegan Recipes
February 28 - American Vegan Kitchen
March 7 - Yellow Rose Recipes
March 14 - Viva Vegan
March 21 - Vegan Brunch
March 28 - Final Week! Free choice - choose any cookbook. Dessert cookbook will be Vegan cookies Invade your Cookie Jar or other.

I'm planning on making lemon garlic pasta, teriyaki quinoa, white bean hummus with fresh thyme and basil, and maybe super-charge me cookies! I'm excited to try this book out.

I'm sitting this week out. There were four books I didn't have so I told myself I could buy two and skip two. Plus I start track practice this week and need a break from cooking. I'll be checking in for food porn, though, so don't disappoint me!

Our menu for this week is Bean and Corn Tortilla Lasagna, Thai Chick-Un Pizza, and Lemon Chickpea Lentil Soup. I'm excited to try the pizza, after last week's amazing Brooklyn Pad Thai.

I made one of the recipes today 'cause I wanted it with my falafel I made from Vegan with a Vengeance.

I made the Kids Dynamo Hummus. It was pretty good. I had it in my falafel sandwich!

Still waiting to get this in the mail, so I'm starting the week with a couple things from AFR that I wanted to try but didn't get the chance. Hopefully ED&BV comes before the end of the week so I get to participate for reals with this one!

I made the Cinnamon-Lime Quinoa with Apricots and Almonds. I didn't have lime, so I used lemon juice instead and didn't use any zest. I really liked it and I think it would be even more awesome with lime.
I also made the Tamari Roasted Chickpeas which were totally yummy. Incredible easy too.
I'd like to make the bean and corn lasagna, wild chick soup, sweet potato lentil chili, and the chocolate chunk spice cookies this week. Those won't all happen, but hopefully some will...

just adding that i always start my week on sundays... so that's why i've already cooked from this week's book. my monday-friday is incredibly busy with work and the 2.5 hours i spend on buses each day that i can rarely cook anything.

I ordered this book online from an Australian store so that it would arrive in time, then after I hit 'purchase', they told me that it was being shipped from the States and won't get here for three weeks. I left them a rather displeased email.

Anyway, I'll be cooking from the meagre amount of recipes that I can find online. Sundried tomato pesto tonight, which actually works out pretty well because it's exactly what I feel like.

Just made the Goddess Garbanzos - one of my favorite sandwich fillings. I use diced carrots and red bell pepper instead of celery and apples, and add a little paprika and crushed red pepper for kick. That's what I love about this recipe - so variable. And it tastes great with nutritional yeast mixed in!

Has anyone made the spicoli burgers?

man, i'm so pumped. this is my favorite cookbook, and it gives me a perfect excuse to try a bunch of things i hadn't gotten around to yet! i have extra days for cooking this week, so i'm making full use. i'll probably sit next week out and just eat the leftovers from all this:

monday - cocoa coconut chili
tuesday - blackened tofu w/ cinnamon lime quinoa
wednesday - olive oyl pasta
thurs - gimmie chimis w/simple swiss chard
sunday - chickpea sensation patties w/potato squashers

it's a pretty ambitious cooking week for me, but most of her recipes are really simple. i'm also making the creamy basil dressing for salads and the cheesy white bean dip for snack cravings. shopping after work today!

I started last night, but couldn't get my images to post! I still can't but oh well

I bought this book for the challenge, though it's been on my list for ages.

I made the Teriayki Quinoa, which was really good and super easy.

The 5-Spice Cookies are likewise awesome and easy. I was skeptical about the use of barley flour, because I'd never baked with it, but the cookies turned out really well. They have a slight licorice taste to them, but I really like that.

I’m so excited for this week, this is one of my favourite cookbooks! I still have to do up a post for VWAV but I’ve already made the Rooibos Lemonade, lemony green beans and White bean with thyme and basil, I haven’t decided which mains to make yet, gotta make a run to the grocery store tonight.

We made the tamari chickpeas to eat while playing some complicated nerdy board game, but it doesn't really count because I didn't take out the book and probably didn't follow the recipe at all. However, ED&BV introduced me to roasted chickpeas and I am very, very grateful!

I have to redo my recipe planning since I thought it was AVK week, but I'm excited! I've always wanted to make the spicoli burgers but 1 cup of hemp seeds is pretty damn expensive.

Yesterday I made the 2 bean chipotle lime hummus and the you got peanut butter in my chocolate cookies. I didn't add the sweetener to the hummus and wound up adding a little more chipotle hot sauce because it wasn't spicy enough for me as written. It was a yummy dip with corn chips (but not photogenic, so I didn't take any pictures).

The cookies were good, but very crumbly when still hot. I sadly lost two while transferring them to the cooling rack.

I would make both recipes again.

I made the spicoli burgers last night, they're really yummy. Tonight I'm making the corn and bean tortilla lasagna.
I didn't read ahead in the directions for the burgers that a food processor is required, and mine just broke. They don't hold together very well un-processed.

If you've seen the index or what people here are trying and you'd like me to send you a recipe or two while you wait on your book I'd be happy to! Mine just came in the mail this afternoon so I can't make suggestions yet.
