I highly prefer whole beans to smashed. My go-to is black beans and garlicky greens... usually swiss chard, but you know, whatever's around. Not fancy, but delicious.
Lately I've been eating burritos at Planet Fresh in Santa Cruz. My favorite burrito there is whole black beans, brown rice, chopped tomatoes, lettuce, guacamole, and smoked tofu on a whole wheat tortilla. Then I dip the whole thing in smoky chipotle salsa.

Super cheap: Black beans with a little onion, garlic, cumin and chili powder. Re-hydrated TVP. Sautee for a few minutes in a little oil to heat through. Add salsa in the pan and heat a bit more. Spread on tortillas. EXTRAS for a not so cheap: top with spinach, avacado and some sour cream if you got it. Sometimes I add some corn in the pan too if I have it.
All in all this takes me like 10 minutes and that includes opening all the cans and boiling the water for the TVP.

wrapper: tortilla or toasted nori sheet
fillings: tomato, avocado, rice, beans, red onion, lettuce, apple, sprouts, carrot
innard topping (for when I'm feeling fancy & motivated): either the tofu cream from The Kind Diet, or the Sandwich Mousse from The Urban Vegan.
