What should I do with them? The can of tomato paste is only missing 2 tbsp, and I think there is a little over a cup of coconut milk left. Both need to be used in the next couple of days or will end up in the garbage, which I hate doing. Thanks ppk!

Why does it never occur to me to freeze things like leftover coconut milk? I hate throwing it away!
Note to self: remember there's a box on top of the fridge.

If I have left over coconut milk, I shove it into rice or quinoa. It is so quick and yummy.

If you don't end up using it up, definitely freeze! I put tablespoons of tomato paste on wax paper, freeze them, then once they're solid you can put them in a ziploc/tupperware.

That's great, thanks everyone!
I think I'll end up making curry with the coconut milk, and freezing the tomato paste as Dynahmite suggested - great idea since I only ever seem to use 1-2 tbsp at a time.

You can always freeze both, if you like as many have already said.
With the tomato paste, if you have Viva Vegan, you can make the Latin Baked Tofu. I believe it calls for only a small amount. I freeze tomato paste in 1 tbsp. measures (plop in tablespoon measures spread out a piece of wax paper in a cake pan or something that can fit in your freeszer a few hours, freeze till solid once frozen, pop in a freezer bag). I freeze leftover coconut milk in 1/2 cup measures and keep in old Tofutti containers.
