Does anyone remember the tapioca starch fried egg thread from the old forum? Someone brilliant, who was not me, came up with a simple tapioca starch and water mixture that fried up in a pan into something rather like a fried egg white. At the time, I experimented with improving the taste and consistency by adding a little blended soft tofu and black salt, and was pleased with the results but sort of moved on and forgot about it after a few fried egg sandwiches.

Now I have found this amazing post from The Airy Way blog that has a recipe for soft vegan yolk:

I made it tonight, adding a bit of black salt, and it was AMAZING. It would be so good with big fat spears of asparagus dipped in it. I think the carrot juice is just for color, and next time I think I'll just use a bit of turmeric. I also used nooch + water instead of broth, because nooch has always tasted very egg-yolky to me.

Tonight we had toasted ciabatta topped with a tapioca fried egg, with the yolk drizzled over the top. SO GOOD. However, I did the tapioca egg from memory since it seems to have disappeared from the internets, and the proportions were not quite right. Why don't I save things?!

Does anyone remember this thread and/or have a copy of it somewhere?

ETA:
PS, I've been trying to think of something metal that I could heat in the oven that has a flat part and then a rounded concave or convex part that I could put the tapioca mix on to create a little pocket for the yolk. I know this is unnecessary, but could be fun if I could think of something with the right shape. It would have to be safe for heating, otherwise I think I might be able to make an ice cube tray with a half-circle shape work.

i remember the thread you're talking about. for some reason, i'm thinking it was torque who came up with the recipe, but i could be totally wrong.

beyond that, i'm no help. i have never had a love of eggs, and do not wish to recreate them!

No advice on the actual recipe part, but re: your ETA, the only things I can think of that you might be able to use are an aebleskiver pan or maybe a mini bundt pan? Or a silicone ice cube tray or egg poacher?

this blows my mind!

the tapioca egg was mine, i never pinned down the proportions but it was just tapioca starch and water enough to be a runny pancake-batter type consistency (the starch absorbs water after you stir the first time so you may need to adjust. one side will be nice and rubbery like an egg, the other side will be kind of dry and flat, and you shouldn't even need to flip the darn thing.

Just tapioca starch and water? Any seasonings? My husband used to love poached eggs with corned beef hash. I've got the vegan corned beef hash thing down, but have never been quite sure what a suitable substitute for a poached egg might be.

When I was playing around with the tapioca part before, I added blended soft tofu and feel like it improved the texture. I also added black salt, or just salted it with black salt at the end. I have to fool with the proportion of tofu and the cooking time to try to get it right. The tapioca gives it a weird almost gooey, chewy quality that's hard to describe but is very reminiscent of an egg. I found these were better in a sandwich than plain. With some vegenaise on toasted bread they were very much like the fried egg sandwiches I remember. When I was making them without the yolk, I added a little nooch, which I thought gave it a little yolky-flavor. Now thanks to the brilliant mind behind the runny yolk, that won't be necessary. I've now successfully made that both in the microwave and on top of the stove. I strongly recommend you guys try it. It would be amazing with toast soldiers or asparagus dipped into it, drizzled on top of scrambled or fried tofu, or in your very own fried-egg sandwich.

I've been thinking about this pretty obsessively, and tried several variations on the white today. I tried adding more tofu, less tofu, a small amount of chickpea flour, and some different temps. All were good, I didn't feel any were quite perfect. The problem I'm running into is that it's too gummy. I'm wondering if maybe I need to do a really high proportion of tofu so it "cuts" better if you know what I mean, and just use the tapioca as a binder and the secret ingredient to add that sort of magic something that makes it work. The chickpea flour just made it too bready and not white, even in small amounts. I also think I need to switch from the aseptic boxes of tofu to the water packed kind. I don't really like the flavor of the boxes and there's so little else going on here I think it's important to have the tofu taste really clean. I've also been considering maybe experimenting with a tiny amount of agar added. You know how eggs have that kind of snap when you bite into them? like a jello-y clean break away when they're cooked through, rather than being sticky. That's what I'm trying for. I'm glad I have the PPK to talk about my weird obsessive attempts to make vegan fried egg white. Who else in the world would not only let me ramble like this, but understand and appreciate it. I actually tried to explain to a friend and coworker tonight, and I could tell she was trying, but in the end it's just too much of a stretch for anyone but you guys.

I remember the thread on the old ppk, but decided to finally give it a try upon seeing this one (thanks for posting this Miz Mac!). I made some subs as I didn't have vegan mayo on hand, pureed silken tofu worked okay imo and I couldn't be bothered with juicing a carrot so I used turmeric. I added some silken tofu to the eggwhites as well. I will have to experiment some more, but I think they came out pretty tasty for a first try. The yolk part would be an amazing base for veganized version of sauce hollandaise!

I only made two and ate them with sprinkled on black salt and black pepper. Yum :)
